Quick to assemble, this is a simple recipe I've cooked many times. Stir in hot sauce if you like a bit of heat. I also like to top the finished dish with a sprinkling of shredded cheddar cheese. -Cindi Hayward-Boger, Ardmore, Alabama

Time 35m

Yield 4

Number Of Ingredients 6

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 6

1 1/4 lbs new potatoes (about 10)
2 tablespoons finely chopped onions
2 tablespoons finely chopped fresh parsley
2 garlic cloves, finely chopped
1/4 cup butter or 1/4 cup margarine
1/2 cup shredded cheddar cheese or 1/2 cup gruyere cheese

Steps:

  • Heat one inch of salted water to boiling in a 3 quart saucepan.
  • Add potatoes and cover.
  • Heat to boiling and reduce heat.
  • Simmer for 10 minutes or until fork tender.
  • Drain and cool.
  • Shred potatoes and mix with onion, parsley and garlic.
  • Over medium heat, fry 2 tbl of the butter in a 10 inch skillet until melted.
  • Spread potato mixture evenly in skillet and cook for about 7 minutes or until bottom is brown.
  • Place a large plate over skillet and invert potato patty onto plate.
  • Melt remaining 2 tbl butter in saucepan and slide potato patty, cooked side up, into skillet.
  • Cook for another 7 minutes or until bottom is brown and crispy.
  • Sprinkle with cheese and allow to melt before serving.

Tips:

  • For crispier hash browns, use a cast iron skillet or a well-seasoned non-stick skillet.
  • Make sure the potatoes are grated evenly and finely. This will help them cook evenly.
  • Don't overcrowd the skillet. Cook the hash browns in batches if necessary.
  • Don't stir the hash browns too often. This will break them up and make them mushy.
  • Season the hash browns with salt and pepper to taste.
  • For extra flavor, add in some chopped onion, garlic, or bell pepper.
  • Serve the hash browns immediately with your favorite toppings, such as sour cream, salsa, or a fried egg.

Conclusion:

Onion garlic hash browns are a delicious and easy-to-make breakfast or brunch dish. They're perfect for a lazy weekend morning or a quick weekday meal. With just a few simple ingredients and a little bit of time, you can enjoy a hearty and satisfying meal that will keep you full all morning long.
