1 large fennel bulb (slice fennel into 1/4 inch slices.)
1 large red onion (may also use white onion cut in 1/4 inch thick slices (halved then sliced lengthwise from root to tip))
2 Tablespoons olive oil
1 Tablespoon butter
Kosher salt
2 Tablespoons grated Parmesan
1 Tablespoon chopped fresh Italian parsley
1 teaspoon lemon zest (may use orange zest)
2 teaspoons fresh lemon juice (may use orange juice )
black pepper (dash)
Basil leaves rolled and sliced for top (optional)

Steps:

  • Heat olive oil and butter in a large skillet uncovered over medium-high heat. Add the sliced fennel and onions and stir to coat. Stir occasionally, after 10 minutes sprinkle the vegetables with about a teaspoon salt. Lower the temperature to medium. You want the pan hot enough to get the caramelization going but not so much that the fennel and onions dry out. If that does happen, add a tablespoon or two of water.
  • Stir occasionally, scraping up any bits that are on the bottom. The brown bits are the ones with the most flavor. Cook for another 30 minutes or up to an hour, depending on how impatient you are. The longer it cooks the more caramelized the onions and fennel become. Taste test along the way. The dish will have a lot of flavor and doesn't have to be cooked down all the way.
  • When ready to serve, remove the pan from the heat, add in the grated Parmesan cheese, the chopped parsley, lemon zest, and lemon juice, and black pepper.
  • Sprinkle with slivered basil leaves, if desired. Or serve with the fennel fronds.
  • Pan roasted fennel is excellent served with Italian sausages, pork chops, roast chicken, seafood, or on crostini. I can't think of anything that I wouldn't serve with it.

1 tablespoon fennel seeds
1/4 cup (1/2 stick) unsalted butter
1 large onion, minced
3 3/4 cups (about) unbleached all purpose flour
1 package fast-rising dry yeast
1 tablespoon sugar
1 1/2 teaspoon salt
1 1/4 cups hot water (125°F. - 130°F.)
Coarse salt

Steps:

  • Heat heavy medium skillet over high heat. Add fennel seeds and stir until just golden brown and aromatic, about 1 minute. Transfer fennel seeds to large bowl. Reduce heat to medium. Add butter and minced onion to same skillet. Sauté until onion is golden brown, about 20 minutes. Cool slightly.
  • Preheat oven to 400°F. Add 2 cups flour, yeast, sugar and salt to fennel seeds in large bowl. Stir in hot water and onion mixture. Mix in enough of remaining flour, 1/4 cup at a time, to form soft dough. Knead dough on lightly floured surface until smooth and elastic, adding more flour if dough is sticky, about 8 minutes.
  • Form dough into ball. Place on lightly floured surface. Cover with towel. Let dough stand 10 minutes.
  • Dust 4 cookie sheets with flour. Divide dough in half. Roll each half out on floured surface to 12-inch square. Dust well with flour. Fold each square in thirds and cut crosswise into 1/2-inch-wide strips. Unfold strips. Let dough rest 5 minutes. Stretch each strip to 14 inches. Place strips 1/2 inch apart on prepared cookie sheets. Let breadsticks rest 10 minutes.
  • Brush breadsticks lightly with water. Sprinkle lightly with coarse salt. Bake breadsticks until golden brown, about 20 minutes. Cool 15 minutes.
  • Reduce oven temperature to 300°F. Return breadsticks to oven and bake until crisp, about 12 minutes. Cool completely. (Can be prepared 2 days ahead. Store in airtight container.)

1 1/3 cups heavy cream

1 cup panko (Japanese breadcrumbs) or coarse plain breadcrumbs
1/2 cup finely grated Parmesan
1/3 cup finely chopped flat-leaf parsley
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
