PHYLLO CUPS WITH CARAMELIZED ONION HORS D'OEUVRES
We made these tarts, filled with a savory and onion saute, from various different recipes here on zaar and the testing and tasting was the good part! These were served at the Inauguration of our new North Wing, on May 11, here at the home and now we are going to serve them at the opening of 3 extra dining rooms -- what fun and how nice!

Yield 1 tray of hors d'oeuvres

Steps:
- Heat oven to 350ºF.
- Melt 2 tablespoons butter or margarine in 10" skillet; add onions. Cook over medium heat, stirring occasionally, until onions are golden and caramelized (7-10 minutes). Stir in remaining filling ingredients. Continue cooking until heated through and no more liquid.
- Set aside. Allow to cool at least 10 minutes.
- Butter the insides of phyllo cups.
- Place phyllo cups on ungreased baking sheet; place about 1 scant teaspoon of onion mixture in center of cups. Top with 1 teaspoon cheese.
- Repeat the process with remaining phyllo cups.
- Bake 5-8 minutes or until golden brown. (Watch them so they don't burn!).
- Serve warm.
- *Filling can be made 1 day ahead. Just bring to room temperature when you are going to make the cups.*.
BREAKFAST ONION CUPS RECIPE BY TASTY

Steps:
- Heat oven to 400˚ (200˚C).
- Mix eggs, milk, and spices in large mixing bowl.
- Add broccoli, bacon, and cheese, and continue mixing until all ingredients are well incorporated.
- Cut ends off the red onion and then slice in half. Gently pop out rings, using desired size.
- Heat cast-iron pan on low and place onion rings in the pan.
- Spoon in small amount of egg mixture and press on the onion ring create a seal, then repeat for all rings.
- Pour the remaining mixture filling to just about the top of each ring.
- Cover with foil.
- Place in oven and cook for 25 minutes, or until eggs are cooked through and slightly puffed and onion rings are tender.
- Remove from pan immediately and sprinkle with desired topping. (We used grated parmesan cheese.)
- Enjoy!

- In a large skillet, cook onions in butter over medium heat for 10-12 minutes or until very tender. Remove and keep warm. In the same skillet, cook steak for 2-3 minutes or until no longer pink. , Return onions to pan. Stir in the flour, brown sugar and salt until blended; gradually add broth. Bring to a boil; cook and stir for 4-6 minutes or until thickened., Separate biscuits; split each horizontally into three portions. - Combine sour cream and horseradish; chill until ready to serve.
- Pre-heat oven to 400°F.
- Halve and peel red onion; CAREFULLY remove the outer TWO rings and place into shallow baking dish; upside down.
- Brush with oil and add 1/2 of salt and pepper.
- Roast for 15-20 minutes.
- Fry bacon.
- Chop peppers, garlic, and remaining onion; brown in leftover bacon grease for about 5 minutes.
- Place beets, rosemary, and remaining salt/pepper into pan with garlic and peppers; cook another 5 minutes.
- Carefully turn roasted onions right-side up and place veggies into each cup, stuffing until all mixture is used.
- Top with crumbled bacon.
- Return to oven and roast another 5 minutes.
- Serve with horseradish/sour cream sauce.

- Heat oven to 350ºF. Heat dressing and oil in large skillet on medium heat. Add onions. Cook 15 to 18 minutes or until golden brown, stirring occasionally. Meanwhile, place 1 wonton wrapper in each of 24 mini muffin pan cups sprayed with cooking spray, extending edges of wrapper over top of cup. Bake 5 minutes. Spoon 1 tablespoon onion into each baked wonton cup. Top with cheese and thyme. Bake 8 to 10 minutes more or until filling is heated through and edges of cups are golden brown.

Found this recipe years ago never made them because my son is not a fan of onions...decided to finally make it and to my surprise he took one of these cups and ate it with no complaints! If I didnt see it with my own eyes I wouldn't have believed it. Rest of family loved them too.

- 1. Preheat oven to 400. Invert a muffin pan and lightly grease4 the back side of ten muffin cups w/olive oil. Pat a biscuit flat and place over greased muffin cup and stretch dough to cover cup. Repeat w/remaining biscuits. Bake until golden brown about 7 minutes....let cool slightly then remove biscuit cups carefully fom pan and invert onto a baking sheet to cool completely.
- 2. Meanwhile heat a medium cast-iron skillet over med-high heat. Add 2 tblsp. of olive oil and the onions, 1/4 tsp.salt n 1/4 tsp.blk.pepper cook stirring every 3 min. for 15 min. or until onions are softened n are browned. Divide onion mixture among the biscuit cups.
- 3. In a small saucepan melt butter over med-low heat. Whisk in flour until smooth. Pouring slowly whisk in heavy cream (or 1/2 n 1/2) and cook, stirring until thickened. Stir in mustard. Remove from heat and stir in 1/2 of the cheese. Season w/ salt n pepper. Spoon the cheese sauce over the onions, sprinkle w/the thyme and remaining cheese. Bake until cheese is melted and biscuit edges are golden ...5 minutes and ENJOY!
