DAVID TANIS'S ONION CONFIT

David Tanis's Onion Confit image

The French word "confit" usually refers to food that is slowly cooked in some kind of fat. Originally, confit was a method used for preserving meat, typically duck, goose or pork. When stored and cooled in earthenware crocks, a layer of fat on top kept the food from spoiling by sealing out air. Onion confit, on the other hand, is a savory preparation of sliced onions, cooked to a soft, almost melting consistency, often seasoned with salt, herbs, sugar and vinegar for a somewhat sweet-and-sour effect. Sometimes called onion marmalade, a spoonful or two makes a perfect accompaniment to roasted meats. It may also be used to make onion tarts or pizzas, or as a "bed" for baked fish. The mixture will last for a week or so, refrigerated. To use, reheat gently over low heat.

Time 1h

Yield 4 cups

Number Of Ingredients 9

3 pounds medium onions
6 tablespoons butter, duck fat or lard
2 teaspoons sugar
Salt and pepper
2 bay leaves
A few fresh thyme sprigs
Pinch of cayenne
2 tablespoons white wine vinegar or red wine vinegar
1/2 cup dry white or red wine

Steps:

  • Cut onions in half from top to bottom (not crosswise). With a paring knife, peel each onion half. Lay each onion half flat side down. Holding the knife at a slight angle, cut away and discard the hard root end. Using a sharp knife, cut into 1/4-inch half-moons.
  • Put a large heavy-bottomed pot, preferably enameled cast iron, over medium-high heat. Melt butter, then add all the sliced onions and stir to coat. Sprinkle with sugar and season generously with salt and pepper. Continue stirring until onions begin to wilt and soften, without browning, about 5 to 8 minutes.
  • Add bay leaves, thyme, cayenne, vinegar and wine. Reduce heat to medium and continue to cook, stirring occasionally, until onion mixture is quite soft and most of the liquid has evaporated, about 30 minutes. Taste and adjust seasoning. Remove and discard bay leaves and thyme. Serve warm.

OVEN-BAKED PIZZA WITH CARAMELIZED ONIONS, GORGONZOLA, AND WALNUTS

Oven-Baked Pizza with Caramelized Onions, Gorgonzola, and Walnuts image

Provided by Gina Marie Miraglia Eriquez

Categories     Cheese     Onion     Appetizer     Bake     Quick & Easy     Dinner     Walnut     Party     Gourmet     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 6 servings (appetizer)

Number Of Ingredients 6

1/4 cup extra-virgin olive oil
1 1/4 pound onions (2 large), halved and thinly sliced
14 to 16 ounces pizza dough, thawed if frozen
1/4 pound Gorgonzola dolce, crumbled (1 cup)
1/2 cup walnuts, toasted and coarsely chopped
1/4 cup chopped flat-leaf parsley

Steps:

  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook onions with 1/2 teaspoon salt and 1/4 teaspoon pepper, covered, stirring occasionally, until golden, 15 to 20 minutes. Transfer to a small bowl and keep warm, covered.
  • Put a large heavy baking sheet (17 by 14 inches) on lowest rack of oven, then preheat oven to 500°F.
  • Meanwhile, roll out dough on a lightly floured surface with a floured rolling pin, stretching corners with your hands to form a 16- by 13-inch rectangle. (Dough will be easier to roll out as it warms.) Transfer to a large tray lined with sheet of parchment paper. Lightly prick dough all over with a fork, then slide dough (on parchment) from tray onto hot baking sheet.
  • Bake until top is puffed and pale golden in patches, about 10 minutes. (Prick any large bubbles with a fork and flatten.) Remove crust from oven and leave oven on.
  • Sprinkle crust evenly with cheese, walnuts, and parsley. Bake pizza until edge of crust is deep golden, cheese is bubbling and golden in patches, and underside is golden brown, 2 to 4 minutes. Serve immediately.

Tips:

  • Using a mandoline or sharp knife, thinly slice 1 pound of yellow onions. This will ensure that they cook evenly and caramelize properly.
  • Cook the onions slowly over low heat. This will allow them to caramelize and develop a deep, rich flavor.
  • Be patient! Caramelizing onions takes time, but it's worth it for the delicious results.
  • Add a splash of white wine or balsamic vinegar to the onions while they're cooking. This will help to deglaze the pan and add a touch of acidity.
  • Season the onions with salt, pepper, and a pinch of sugar. This will help to balance out the flavors.
  • Once the onions are caramelized, let them cool slightly before using them on your pizza.
  • To make the walnut pesto, simply combine 1 cup of walnuts, 1/2 cup of grated Parmesan cheese, 1/4 cup of olive oil, 2 cloves of garlic, and a pinch of salt and pepper in a food processor. Pulse until smooth.
  • Assemble the pizza by spreading the caramelized onions on the dough, followed by the walnut pesto, crumbled Gorgonzola cheese, and a sprinkle of fresh thyme.
  • Bake the pizza in a preheated oven at 450 degrees Fahrenheit for 10-12 minutes, or until the cheese is melted and bubbly.
  • Let the pizza cool for a few minutes before slicing and serving.

Conclusion:

This onion confit, walnut, and Gorgonzola pizza is a delicious and easy-to-make meal that is perfect for any occasion. The caramelized onions are sweet and savory, the walnut pesto is creamy and flavorful, and the Gorgonzola cheese is rich and tangy. Together, these ingredients create a pizza that is sure to please everyone at your table. So next time you're looking for a new pizza recipe to try, give this one a try. You won't be disappointed!
