I first had this recipe when my husband and I were dating. I am not sure where his mom came up with it, but my family loves and it is an often requested meal in my house. The gravy formed by the dish is great over rice!

Tips:

  • Use a variety of onions: To create a more complex flavor, try using a combination of yellow, white, and red onions. You can also add a few shallots or leeks for extra sweetness.
  • Don't be afraid to caramelize the onions: Caramelizing the onions will bring out their natural sweetness and add a rich, golden color to the soup. Be patient and cook the onions over low heat until they are very soft and brown.
  • Use a good quality cheddar cheese: The cheese is one of the most important ingredients in this soup, so it's worth splurging on a good quality cheddar. Look for a cheese that is sharp and flavorful.
  • Add some extra flavorings: If you want to add some extra flavor to the soup, try adding a bay leaf, a teaspoon of dried thyme, or a pinch of cayenne pepper.
  • Garnish with fresh herbs: Before serving, garnish the soup with fresh parsley, chives, or thyme. This will add a pop of color and freshness to the dish.
