1 ball Best Pizza Dough (or Thin Crust Dough)
4 green onions
3/4 cup shredded mozzarella cheese
1/2 cup shredded Pecorino Romano cheese
2 eggs
Olive oil
Kosher salt

Steps:

  • Follow the Best Pizza Dough recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
  • Place a pizza stone in the oven and preheat to 475°F. OR preheat your pizza oven (here's the pizza oven we use).
  • Slice the green parts off of the scallions so they form long ribbons. In a small skillet, heat 1/2 tablespoon olive oil. Add the scallions and sauté until slightly tender, stirring, for 1 minute. Remove from the heat.
  • When the oven is ready, dust a pizza peel with cornmeal or semolina flour. (If you don't have a pizza peel, you can use a rimless baking sheet or the back of a rimmed baking sheet. But a pizza peel is well worth the investment!) Stretch the dough into a circle; see How to Stretch Pizza Dough for instructions. Then gently place the dough onto the pizza peel.
  • Brush olive oil over the dough and sprinkle with kosher salt. Sprinkle with the mozzarella cheese, then the Pecorino cheese. Top with scallions. Carefully crack two eggs on top and sprinkle with a bit of kosher salt.
  • Transfer the pizza to the pizza stone using the pizza peel, and bake until the egg white is set and the yolk is still runny, about 7 minutes.

2 tablespoons olive oil or butter (or 1 tablespoon of each)
1/2 teaspoon kosher salt
Fresh ground black pepper
Optional adder: Add 1 tablespoon balsamic vinegar with the kosher salt

Steps:

  • Slice the onions.
  • In a large sauté pan or skillet, heat the olive oil or butter over medium high heat. Add the onion and cook for 4 minutes, stirring occasionally.
  • Add the kosher salt and fresh ground black pepper and cook another 4 to 5 minutes, stirring occasionally. Taste to assess doneness and add a few pinches or salt until the flavor pops.

And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.

2 teaspoons brown sugar
1 large egg, lightly beaten

Steps:

  • In a large bowl, combine the bread crumbs, onion salt and brown sugar. Add egg. Crumble beef over mixture and mix well. Shape into four patties. 2 tablespoons butter or margarine
1 tablespoon all-purpose flour
½ cup sour cream
½ teaspoon salt
½ teaspoon caraway seeds

1 (8 ounce) package refrigerated crescent rolls

1/2 cup nonfat milk
1 eggs or 1/4 cup egg substitute

Steps:

⅓ cup grated Gruyère cheese
1 bunch chives, minced

Steps:

  • Rub a small splash of olive oil across an 8-inch baking dish, or equivalent.
  • In a medium bowl, whisk together the oil, onion dip mix, and milk. Add the eggs and whisk well again. Arrange the bread cubes in the prepared baking dish in an even layer. Very slowly, drizzle the liquid mixture over the bread and sprinkle with the cheese. Cover the dish and refrigerate overnight.
