1 large onion, thinly sliced
Kosher salt and freshly ground pepper
5 sprigs thyme, plus leaves for topping
3 cloves garlic, thinly sliced
1 tablespoon red wine vinegar
1 teaspoon packed dark brown sugar
1 tablespoon whole-grain mustard
1 tablespoon chopped fresh parsley
1 7- to 8-ounce wheel brie cheese
1 7- to 8-inch round loaf white or sourdough bread
2 tablespoons extra-virgin olive oil

Steps:

  • Put the bacon in a large nonstick skillet and turn the heat to medium. Cook until the fat renders, about 5 minutes, then add the onion and season with salt and pepper. Cook, stirring, until the onion softens, about 5 minutes. Add the thyme sprigs and garlic; reduce the heat to medium low.
