Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

12 ounces pasta (I used Linguine)
1 (15 ounce) can diced tomatoes with juice (I used zesty red pepper flavor)
1 large sweet onion, cut in julienne strips
4 garlic cloves, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large basil sprigs, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
parmesan cheese (to garnish)

Steps:

  • Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.
  • Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated - I left about an inch of liquid in the bottom of the pot - but you can reduce as desired .
  • Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese.

ONE-POT PASTA WITH TOMATO-BASIL SAUCE RECIPE - (4.2/5)

One-Pot Pasta with Tomato-Basil Sauce Recipe - (4.2/5) image

Provided by Tufgrlz

Number Of Ingredients 12

12 ounces casarecce or fusilli pasta
1 (28-oz.) can diced tomatoes
2 cups chicken broth
1/2 medium-size yellow onion, sliced
4 garlic cloves, sliced
1 teaspoon dried oregano
1/3 cup firmly packed fresh basil leaves
2 teaspoons kosher salt
1 tablespoon olive oil
1/4 teaspoon dried crushed red pepper (optional)
1 (6-oz.) package baby spinach
Freshly grated Parmesan cheese

Steps:

  • 1. Place first 9 ingredients and, if desired, dried crushed red pepper in a Dutch oven in order of ingredient list. Cover and bring to a boil over medium-high heat (about 12 to 15 minutes). Reduce heat to medium-low, and cook, covered, 10 to 12 minutes or until pasta is slightly al dente, stirring at 5-minute intervals. 2. Remove from heat, and stir in spinach. Cover and let stand 10 minutes. Stir just before serving. Serve with Parmesan cheese. Note: We tested with Garofalo Casarecce pasta. Shrimp Pasta Pot: Prepare recipe as directed, stirring in 1 lb. peeled large, raw shrimp, deveined, with spinach in Step 2.

Tips:

  • Use ripe, flavorful tomatoes: This will give your pasta the best possible flavor. If you don't have fresh tomatoes, you can use canned diced tomatoes, but be sure to drain them well before using.
  • Don't overcrowd the pan: If you add too much pasta to the pan, it will cook unevenly and become mushy. Cook the pasta in batches if necessary.
  • Cook the pasta al dente: This means that the pasta should be cooked through but still have a slight bite to it. Overcooked pasta will be mushy and unpleasant.
  • Use a large pot: This will give the pasta plenty of room to cook evenly. A Dutch oven or large saucepan is a good choice.
  • Season the pasta well: Salt and pepper are essential, but you can also add other seasonings to taste, such as garlic powder, onion powder, or Italian seasoning.
  • Add the cheese at the end: This will prevent it from becoming rubbery. Stir in the cheese until it is melted and creamy.
  • Garnish with fresh basil: This will add a pop of color and flavor to your pasta. You can also add other herbs, such as parsley or oregano.

Conclusion:

One-pot tomato basil pasta is a quick, easy, and delicious meal that is perfect for busy weeknights. With just a few simple ingredients, you can have a flavorful and satisfying pasta dish on the table in no time.
