Time 45m

Yield 6

Number Of Ingredients 13

3 tablespoons ghee (clarified butter)
1 cup chopped green bell pepper
1 cup chopped celery
1 cup chopped onion
1 pound skinless, boneless chicken thighs, cut into 1-inch pieces
14 ounces andouille sausage, cut lengthwise and sliced crosswise into 1/4-inch slices
2 tablespoons Cajun seasoning
1 teaspoon hot sauce
1 (10 ounce) can diced tomatoes with green chiles (such as Rotel®), drained slightly
½ cup unsalted chicken stock
1 (16 ounce) package frozen riced cauliflower
1 pound frozen raw shrimp, peeled and deveined
freshly ground black pepper to taste

Steps:

  • Melt ghee in a large Dutch oven over medium heat. Add bell pepper, celery, and onion. Cook until vegetables begin to soften and onion turns soft and translucent, 3 to 4 minutes. Add chicken, sliced sausage, Cajun seasoning, and hot sauce. Cook and stir until everything is well combined, 2 to 3 minutes. Add drained tomatoes and stock and bring to a boil.
  • Reduce heat, cover, and simmer until chicken is cooked through, about 15 minutes. Remove lid and add riced cauliflower, breaking up any clumps while stirring. Add frozen shrimp and increase heat to medium high. Push each shrimp below the surface of the hot tomato sauce and season with black pepper. Bring to a boil and cook until shrimp curls and turn pink in color, 6 to 8 minutes.

ONE-POT JAMBALAYA

One-Pot Jambalaya image

This is an easy jambalaya recipe that I've been making for a long time. Many recipes call for serving the "sauce" over the rice, but I cook everything all together. (As long as your heat isn't too high, there should be enough liquid to cook the rice without making it gummy.) Enjoy!

Time 1h

Yield 12 serving(s)

Number Of Ingredients 22

1 cup chopped bell pepper (red and or or green)
1 medium onion, chopped
2 stalks celery, chopped
2 jalapenos (or red chiles, seeded and chopped)
5 garlic cloves, minced
1 tablespoon dried thyme
1 tablespoon dried basil
1 tablespoon dried parsley
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper (or more to taste)
1/4 teaspoon smoked hot paprika (or more to taste) (optional)
1/4 teaspoon red pepper flakes
1 teaspoon grill seasoning
1 teaspoon sugar
salt and pepper
1 lb andouille sausage, sliced
1 lb boneless skinless chicken breast (or thighs)
1 (28 ounce) can crushed tomatoes
3 cups chicken stock
1 1/2 cups white rice (uncooked)
2 tablespoons olive oil
1 tablespoon butter

Steps:

  • In a large pot, heat 1 T olive oil and add the sliced sausage and 1/2 of the grill seasoning. Saute on medium-high until the sausage gets some color on it, then remove it and set it aside. Add in the chicken (adding more oil if necessary) and the rest of the grill seasoning and saute until the chicken is browned but not cooked through. Remove the chicken from the pot and set aside.
  • Add the butter and a bit more olive oil to the pot and mix in the peppers, onions, celery and jalapenos. Saute on medium heat until the vegetables are softened, about 8 minutes. Add in the garlic and saute for an additional 2 minutes. Stir in the cayenne, paprika, and red pepper flakes and saute for an additional minute to toast the spices.
  • Stir in the crushed tomatoes and chicken broth and bring to a simmer. Stir in the thyme, basil, parsley, oregano, and sugar. Simmer, partially-covered, over low heat for 20 minutes.
  • Return the sausage and chicken to the pot. Stir in the rice. Cook for an additional 20 - 30 minutes, stirring occasionally, until the rice is tender and the chicken is cooked through. Taste for seasoning and add salt and pepper as desired.

Tips:

  • Mise en place: Chop and measure all of your ingredients before you start cooking. This will make the process go much smoother.
  • Use a large pot: Jambalaya is a one-pot meal, so you'll need a large pot that can hold all of the ingredients.
  • Cook the rice in the pot: This will save you from having to dirty another dish.
  • Don't overcook the rice: Rice should be cooked through but still have a little bite to it.
  • Add the vegetables and sausage in stages: This will help to prevent the vegetables from getting overcooked.
  • Use a Cajun seasoning blend: This will give your jambalaya an authentic flavor.
  • Add some heat: Jambalaya is a spicy dish, so don't be afraid to add some cayenne pepper or hot sauce to taste.
  • Serve with your favorite sides: Jambalaya is often served with cornbread, rice, or beans.
