1 large onion, diced
4 cloves garlic, minced
½ teaspoon salt

3 cups low-sodium chicken broth
2 cups unsweetened almond milk
1 teaspoon dried basil
¾ teaspoon dried oregano

2 boneless, skinless chicken breasts, cut into ½-inch cubes
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more taste
1 tablespoon olive oil, plus more as needed
3 tablespoons unsalted butter
2 shallots, finely chopped
3 cloves garlic, minced
¼ cup all purpose flour
½ cup dry white wine, such as sauvignon blanc
7 cups low sodium chicken stock
½ lb dried fettuccine noodles, broken 1 in (2.54 cm) pieces
1 cup heavy cream
½ cup parmesan cheese, finely grated, plus more for garnish, plus 2 tablespoons
4 cups baby spinach
