8 slices bacon (sliced into pieces)
1 pound chicken breast (cubed)
salt and pepper
2 cups chicken broth
2 cups half and half
1 package dry ranch seasoning
8 ounce penne pasta
2 cups broccoli (chopped)
1½ cups Crystal Farms ® Whole Milk Mozzarella Cheese
Chopped parsley for garnish

Steps:

  • In a medium sized skillet, cook the bacon until crisp, remove with slotted spoon and then set aside on a plate. Add the chicken, cook until brown and no longer pink. Set aside on the plate. Drain the remaining grease.
  • Add chicken broth, half and half, dry ranch seasoning mix to the skillet and whisk. Add the penne pasta and broccoli then bring to a boil and cover. Simmer for about 10 minutes or until the pasta is tender. Stir in the cheese and chicken and stir until cheese is melted and heated through.
  • Garnish with fresh chopped parsley if desired.

1 to 1 1/4 lb boneless skinless chicken thighs, cut in 1-inch pieces
1 cup diced yellow bell pepper (about 1 large)
1/2 cup sliced green onion whites
1/2 teaspoon pepper
1/4 teaspoon salt
1 carton (32 oz) Progresso™ chicken broth
1 cup heavy whipping cream
12 oz uncooked rotini pasta (3 3/4 cups)
1 cup frozen sweet peas
2 cups shredded sharp Cheddar cheese (8 oz)
1/4 cup sliced green onion greens

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat. Add chicken; cook 6 to 8 minutes, turning once, until chicken is no longer pink in center. Using slotted spoon, transfer to bowl; cover and keep warm. Add bell pepper, green onion whites, pepper and salt to butter and drippings in pan; cook over medium-high heat 3 to 5 minutes, stirring frequently, until softened.
  • Stir in broth and whipping cream; heat to boiling. Stir in pasta; return to boiling. Reduce heat; simmer uncovered 12 minutes, stirring frequently. Stir in frozen peas and chicken; stir 3 to 4 minutes or until pasta is cooked to desired tenderness and sauce is thickened.
  • Remove from heat; stir in cheese until melted and smooth. Top with green onion greens.

1 tbsp olive oil, for frying
200g cooked chicken, torn into pieces
2 garlic cloves, thinly sliced
1 chicken stock cube
160g dried short pasta
100g frozen peas
200g long-stem broccoli, cut into 3-4 pieces
150g crème fraîche
1 lemon, juiced
30g parmesan, grated, plus extra to serve
small bunch fresh mint, leaves picked

Steps:

  • Drizzle a little oil into a large, high-sided frying pan set over a medium heat. When the pan is hot, add the chicken and garlic, and fry for 5 mins, stirring often so it doesn't burn. Pour in 900ml boiling water, then add the stock cube and pasta along with some seasoning. Bring to the boil, then cover and simmer for 8 mins.
  • Stir in the peas and broccoli for the last 4 mins of cooking time, and replace the lid. You might need to increase the heat slightly to get the temperature back up to a simmer. Add a splash more water if the pasta is looking dry. After 4 mins, remove the lid and reduce the heat to low, then stir in the crème fraîche. Taste for seasoning. Remove the pan from the heat and stir through the lemon juice, parmesan and mint leaves. Finish with some extra parmesan, if you like.
