BACON CHEESEBURGER PASTA

I try to make foods that are not only kid friendly, but are also easy to reheat since my husband works long hours and often eats later than our children. If you like, use reduced-fat cheese and ground turkey for a lighter version. -Melissa Stevens, Elk River, Minnesota

Time 40m

Number Of Ingredients 15

3 cups water
15 oz can tomato sauce
1/3 cup chopped dill pickles (plus more for garnishing, if desired)
2 tsp Worcestershire sauce
2 tsp ground dry mustard
1 1/2 tsp packed light brown sugar
1/2 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp black pepper
1 lb lean ground beef (I use 85/15 or 90/10)
3 cups dried, uncooked elbow macaroni pasta ((about 12 oz))
6 slices cooked and crumbled bacon
6-7 slices American cheese
1/3 cup yellow onion, finely diced ((optional))
minced fresh parsley, for garnish ((optional))

Steps:

  • Preheat oven to 475 F degrees. Lightly spray a 9x13" casserole dish (or other oven safe 3 qt baking pan) with non-stick cooking spray. Set aside.
  • To a large mixing bowl, add water, tomato sauce, pickles, Worcestershire sauce, dry mustard, brown sugar, garlic powder, salt and pepper. Whisk to combine well.
  • Using your fingers (I like to wear gloves for this part), crumble beef into small 1/2" pieces and add them to the mixing bowl. Add in dried macaroni and stir to combine.
  • Pour mixture into prepared baking dish, cover tightly with aluminum foil, and bake for 25 minutes.
  • Remove dish from the oven, remove foil, and stir well (don't forget the bottom of the dish and the sides too!). Top pasta with American cheese slices and crumbled bacon.
  • Leave UNcovered and return to oven to bake another 5-7 minutes, until cheese is melted.
  • Let dish cool 5-10 minutes before serving. Top with finely minced onion, chopped pickles and/or fresh parsley if desired.

Categories     main-dish

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 12

2 tablespoons olive oil
3 scallions, thinly sliced, white and green parts separated
1 clove garlic, grated
1 pound ground beef
Kosher salt and freshly ground black pepper
1/3 cup ketchup
1/4 cup Dijon mustard
3 tablespoons tomato paste
2 cups whole milk
1 pound elbow macaroni
2 cups shredded Cheddar
1/4 cup chopped parsley leaves

Steps:

  • Heat the oil in a large pot or Dutch oven over medium-high heat. Add the white and light-green parts of the scallions and cook, stirring occasionally, until softened, 2 to 3 minutes. Stir in the garlic and cook until just fragrant, about 1 minute. Add the ground beef, 1 teaspoon salt and a few grinds of black pepper and cook, breaking up the beef into small pieces, until no longer pink, 5 to 6 minutes.
  • Stir in the ketchup, mustard and tomato paste. Add the milk, macaroni, 2 cups water, 3/4 teaspoon salt and a few grinds of black pepper and stir to combine. Bring the mixture to a boil, then reduce to a simmer, cover and cook until the pasta has absorbed most of the liquid and is softened, 13 to 15 minutes.
  • Uncover (any remaining liquid will thicken as the dish sits), add the cheese and stir until melted. Garnish with the parsley and remaining scallion greens.

Tips:

  • Cook the bacon first: This will render out the fat and flavor, which will add a delicious richness to the pasta.
  • Use a high-quality cheese: The cheese is one of the main ingredients in this dish, so it's important to use a cheese that you enjoy. A sharp cheddar or a smoky Gouda would both be good choices.
  • Don't overcook the pasta: The pasta should be cooked al dente, or slightly firm to the bite. This will prevent it from becoming mushy.
  • Add the cheese sauce to the pasta immediately: This will help the cheese melt and evenly coat the pasta.
  • Top with your favorite toppings: Some popular toppings for bacon cheeseburger pasta include diced tomatoes, shredded lettuce, and crumbled bacon.

Conclusion:

One-pot bacon cheeseburger pasta is a quick and easy meal that is sure to please everyone at the table. It's a great way to use up leftover bacon and cheese, and it's also a fun and creative way to serve pasta. So next time you're looking for a delicious and satisfying meal, give this recipe a try.
