MEAT LOAF
1 1/4 lb ground beef (90% fat free)
1 medium onion (diced)
2 large eggs (beaten)
1 pkg saltine crackers (finely crushed)
1/4 c soy sauce, dark
1 Tbsp salt and pepper
POTATOES AND GREENBEANS
4 medium potatoes (cut in half)
1 can(s) cut green beans (drained)
1/2 stick butter or margarine
1/4 c ranch and bacon dressing
1 tsp salt and pepper
3 slice bacon, cut in half

Steps:

  • 1. Spray a 9x13 inch pan with Pam, and preheat oven to 375 degrees
  • 2. In a large bowl, mix ground beef with cracker crumbs, diced onion, soy sauce, eggs and salt and pepper.
  • 3. Shape into a loaf and put into middle of baking pan. On top of the loaf, cut 3 pieces of bacon in half and place on top of meatloaf.
  • 4. On one side of loaf, place potatoes, cut side down and cut margarine and place on the potatoes. On the other side, add drained green beans. With 15 minutes of cooking time left, add the ranch bacon dressing to the green beans. Salt and pepper to taste.
  • 5. Bake in preheated over for one hour and 15 minutes. Let set for 10 minutes before slicing.

1/8 teaspoon pepper
2 teaspoons dried parsley

3 medium baking potatoes, peeled and sliced 1/4 inch thick
3 medium onions, peeled and sliced 1/4 inch thick
3 carrots, peeled and sliced 1/2 inch thick

Steps:

  • Preheat oven to 375°F and lightly grease the bottom of a 13x9x2 inch baking pan.

1/4 teaspoon onion powder
1/4 teaspoon kosher salt

Steps:

4 large eggs, beaten
1 cup ketchup
1/2 cup brown sugar
