A one pan recipe with minimal clean-up required. A little sister in my husband's fraternity was kind enough to share her recipe with me which I've since made dozens of times.

Yield 1 9x5x3-inch loaf

Number Of Ingredients 7

1/3 cup vegetable oil
1 1/2 cups mashed bananas (, about 3 large)
1/2 teaspoon vanilla extract
3 eggs
2 1/3 cups Bisquick baking mix
1 cup sugar
1/2 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Generously grease the bottom only of a 9x5x3-inch loaf pan.
  • Stir all ingredients in pan with a fork until moistened; beat vigorously 1 minute.
  • Bake 55 to 60 minutes or until a toothpick comes out clean.
  • Cool 5 minutes.
  • Run knife around sides of loaf to loosen, remove from pan.
  • Cool completely.
  • (if loaf sticks to pan, press gently on side of loaf with a knife).

1 c sugar
1/2 tsp salt
1/2 c butter or margarine-one stick
3 ripe bananas-very ripe is great
2 eggs-beaten
1 tsp baking soda
2 c flour
1/2 c nuts chopped-pecans or walnuts

Steps:

  • 1. CREAM SUGAR, SALT AND BUTTER OR MARGARINE WITH BEATER
  • 2. THEN ADD THE 2 EGGS AND 3 MASHED BANANAS to the above mixture and blend well.
  • 3. IN SEPERATE BOWL ADD BAKING SODA PLUS THE FLOUR, SIFT AND MIX.
  • 4. ADD THE DRY INGREDIENTS TO THE CREAMED MIXTURE (OF SUGAR, SALT, BUTTER AND THE BANANA MIXTURE)MIX ALL UNTIL JUST WELL BLENDED THEN ADD THE CHOPPED NUTS.
  • 5. TURN INTO A GREASED LOAF PAN AND BAKE FOR ABOUT 1 HOUR AT 325 degrees or til brown. You can stick a toothpick into center and if it comes out clean it is done. Do not overbake and start checking with toothpick as soon as it starts looking brown which will be around an hr. I like to drizzle a little powered sugar frosting over the top while it is still warm, or just spread a little butter over the top instead. I prefer, the drizzle of frosting; however. It is wonderful bread and the best banana bread I have ever eaten. My grandmother clipped it out of the Omaha World Herald newspaper around 1958.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas.
