3 cups chicken broth
2 lbs yukon gold potatoes, peeled and diced
1 medium yellow onion, diced
6 garlic cloves, minced
1 tablespoon dried parsley
4 tablespoons unsalted butter
1/3 cup all-purpose flour
1 (12 ounce) can half-and-half or 1 (12 ounce) can heavy cream
2 cups shredded sharp cheddar cheese
salt and pepper

Steps:

  • Add diced potatoes, diced onion, minced garlic, bacon, parsley and chicken broth to the slow cooker. Season with salt and pepper. Stir and cook for 6-8 hours on low or on high for 3-4 hours, until the potatoes are fork tender.

  • COOK'S NOTES.
  • If the soup is too thick, add more chicken broth.
  • Serve warm, garnished with bacon, cheese and sour cream.
  • The soup can be refrigerated for up to 3 days.
  • OPTIONAL TOPPINGS: optional toppings: chives, extra shredded cheddar cheese and bacon.
  • NOTES:.
  • You can use evaporated canned milk, or for even a richer texture, you can use half and half or heavy cream.

Categories     Potato

Time 6h30m

Yield 12 serving(s)

Number Of Ingredients 8

8 medium potatoes
1 cup ham, diced
1 large onion, chopped
1 1/2 cups butter (may be reduced to 1 cup)
1 teaspoon pepper
1 teaspoon salt
4 cups water
2 cups milk (warm milk works best, see directions)

Steps:

  • Place all the ingredients except the milk into a slow cooker for 4-6 hours on low.
  • Add warm milk 30 minutes before serving. Cold milk will stop the cooking process and delay meal. Do not add sooner because the milk may curdle.
  • To thicken soup, add instant potato flakes to taste. You may use potato pearls but you will have to stir the soup a lot more to get the pearls to desolve.

Tips:

  • Use a slow cooker liner: This makes cleanup a breeze, as you can simply remove the liner and toss it away.
  • Don't overfill the slow cooker: Fill it no more than ⅔ full, or the soup may boil over.
  • Add the potatoes last: This will prevent them from becoming mushy.
  • Season to taste: Add salt, pepper, and other seasonings to taste, and adjust the amount of milk or broth as needed.
  • Serve with toppings: Top the soup with shredded cheese, crumbled bacon, chopped chives, or diced avocado.
