Time 17m

Number Of Ingredients 9

16 medium Tomatillos ( husks removed and rinsed)
6 Garlic Cloves (unpeeled and lightly crushed)
3 Tbsp New Mexico Red Chilies (ground)
2 Tsp Ground Cumin
2 Tsp Lime Zest
2 Tbsp Fresh Lime Juice
Tabasco Sauce ( to taste)
Salt and Pepper (to taste)
Tortilla chips (for serving)

Steps:

  • Preheat the oven to broil and set the oven rack to approximately 6 inches from the broiler. Line a baking sheet with aluminum foil.
  • Place the tomatillos and crushed garlic on the baking sheet and place it in the oven. Broil until the tomatillos are charred, about 12 minutes, flipping halfway through. Peel the garlic.
  • In a food processor, combine the tomatillos, garlic, ground red chilies, cumin, lime zest and juice, 1 teaspoon salt, and 1/4 teaspoon pepper. Process until the mixture is smooth.
  • Season to taste with Tabasco. I suggest starting with 1 teaspoon. Add 1 or 2 teaspoons of extra ground red chilies if you would like it to a bit spicier. Add salt and ground black pepper to taste.
  • Serve with tortilla chips or as a topping for your tacos or your breakfast eggs.

FIRE-ROASTED TOMATO CHIPOTLE SALSA

Fire-Roasted Tomato Chipotle Salsa image

This is a great all-purpose salsa. It's especially good with red meats. It's not real hot. You could make it hotter by using different peppers but I like this just the way it is.

Provided by Heydarl

Categories     Vegetable

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 13

1 lb ripe tomatoes, diced for PickleLover
3 -5 garlic cloves, finely chopped for Iewe and her houseful of garlic lovers
1/2 bunch fresh cilantro, coarsely chopped for TxGriffLover, who is an acquired taste
1 small red onion, finely chopped for our savoury friend
1 small chipotle chile, finely chopped for French Bunny, who is sometimes hot & spicy
1 teaspoon adobo sauce, from canned chipotle chile for Heydarl, who likes to surprise with a kick
1/2-1 teaspoon sugar, for Bella14Ragazza, our sweet team member
lime juice, to taste for GaylaV, who provides a little pucker power
salt, to taste, for Iceland, as she is sure to find salt in Iceland
black pepper, freshly ground, to taste for katew, our pepper lover
1 pinch cinnamon (optional)
1 pinch ground allspice (optional)
1 pinch ground cumin (optional)

Steps:

  • Put the tomatoes, garlic and cilantro in blender or food processor and process until smooth. If you prefer a chunkier salsa, just mix ingredients together in a large bowl.
  • Transfer to large bowl and add onion, adobo marinade and sugar.
  • Add lime juice, salt and black pepper to taste, then add the cinnamon, allspice and ccumin, if using.
  • Best when freshly made, but you may cover and chill until ready to serve.

Tips:

  • Select ripe and fresh tomatoes: For the best flavor, use ripe, flavorful tomatoes. Roma tomatoes are a good choice because they have a low moisture content and a concentrated flavor.
  • Roast the tomatoes and peppers: Roasting the tomatoes and peppers enhances their flavor and gives the salsa a smoky depth. Be sure to roast them until they are slightly charred.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the salsa. If you don't have fresh cilantro, you can substitute dried cilantro, but it will not have the same flavor.
  • Adjust the heat level to your taste: This recipe calls for two chipotle peppers, which will give the salsa a medium heat level. If you want a milder salsa, use one chipotle pepper or remove the seeds from the peppers before roasting them. If you want a hotter salsa, use three or more chipotle peppers.
  • Serve the salsa immediately or store it in the refrigerator for later: This salsa is best served fresh, but it can be stored in the refrigerator for up to a week. If you are storing the salsa, be sure to bring it to room temperature before serving.

Conclusion:

This One-Hellava Chipotle Salsa is the perfect addition to any Mexican dish. It is smoky, spicy, and flavorful, and it will add a kick to your favorite tacos, burritos, and enchiladas. So next time you are looking for a delicious and easy-to-make salsa, give this recipe a try. You won't be disappointed!
