16 medium Tomatillos ( husks removed and rinsed)
6 Garlic Cloves (unpeeled and lightly crushed)
3 Tbsp New Mexico Red Chilies (ground)
2 Tsp Ground Cumin
2 Tsp Lime Zest
2 Tbsp Fresh Lime Juice
Tabasco Sauce ( to taste)
Salt and Pepper (to taste)
Tortilla chips (for serving)

Steps:

  • Preheat the oven to broil and set the oven rack to approximately 6 inches from the broiler. Line a baking sheet with aluminum foil.
  • Place the tomatillos and crushed garlic on the baking sheet and place it in the oven. Broil until the tomatillos are charred, about 12 minutes, flipping halfway through. Peel the garlic.
  • In a food processor, combine the tomatillos, garlic, ground red chilies, cumin, lime zest and juice, 1 teaspoon salt, and 1/4 teaspoon pepper. Process until the mixture is smooth.

1 tablespoon olive oil
1/2 onion, peeled and chopped
2 lbs roma tomatoes, blackened
4 teaspoons finely minced roasted garlic
1/2 cup minced fresh cilantro leaves
4 chipotle chiles in adobo, chopped
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon salt
1 teaspoon sugar

Steps:

  • Heat a tablespoon of oil in a saute pan over medium heat until lightly smoking, add the onion and saute until carmelized, about 10 minutes or so.
  • Transfer the onion, half the blackened tomatoes and garlic to a food processor and pulse until finely chopped but not pureed. Add the cilantro and chipotle chiles and pulse again to mix.
