Steps:
- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.

ONE BOWL MICROWAVE CHOCOLATE FUDGE
EZ yummy fudge recipe my Mother gave me. The hardest part is waiting 2 hours for it to set in the refrigerator. You can substitute the semi-sweet chocolate for milk chocolate, if you prefer, requiring 16 oz. of milk chocolate chips. Also vary the recipe by adding chopped nuts and 2 cups of miniature marshmallows to create "Rocky Road Fudge"...mmmmmm good! I hope you enjoy this.

Tips:
- Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and avoid any mishaps.
- Use high-quality chocolate: The quality of your chocolate will greatly impact the flavor of your fudge. Look for a chocolate that is at least 70% cocoa solids.
- Don't overcook the fudge: Fudge is a delicate dessert, and it's easy to overcook it. Once the fudge has reached the desired consistency, remove it from the heat immediately.
- Let the fudge cool completely before cutting it: This will help the fudge to set properly and prevent it from crumbling.
- Store the fudge in an airtight container in the refrigerator: Fudge will keep for up to 2 weeks in the refrigerator.
