Time 50m

Yield 10

Number Of Ingredients 12

2 tablespoons unsalted butter
1 medium yellow onion, finely chopped
½ teaspoon ground thyme
2 teaspoons Kosher salt
1 ½ cups uncooked white rice
1 clove garlic, minced
2 cups low-sodium chicken broth
1 ¾ cups milk
freshly ground black pepper
1 pound boneless, skinless chicken breasts, cut in bite-size pieces
1 cup fresh or frozen peas
1 ½ cups shredded sharp Cheddar cheese

Steps:

  • Melt butter in a large heavy-bottomed pot or Dutch oven over medium heat. Add onion, thyme, and 1/2 teaspoon salt, and cook, stirring occasionally, until the onion is soft and translucent, about 8 minutes. Add rice and garlic. Cook, stirring occasionally, until fragrant, about 1 minute. Add broth, milk, and remaining 1 1/2 teaspoons of salt. Season with pepper.
  • Bring to a boil, stirring occasionally so that rice doesn't stick to the pot. Add chicken, stir to combine, and bring back to a boil. Reduce heat to medium-low, cover, and simmer until all liquid is absorbed and rice is tender, about 15 minutes. Add more water if the rice absorbs it all before becoming tender.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Remove pot from heat. Stir in peas and 1 cup Cheddar cheese. Taste and season with more salt to taste. Sprinkle with remaining 1/2 cup Cheddar cheese.
  • Place under the broiler and cook until cheese turns golden brown in spots, 3 to 5 minutes. Serve immediately.

Categories     One Dish Meal

Time 1h5m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 lb lean ground beef
1 cup raw white rice
1 (2 ounce) package dry onion soup mix
1 (10 3/4 ounce) can cream of mushroom soup
1 cup water
1 cup sliced green onion (optional)

Steps:

  • Crumble the raw ground beef in a 2 1/2 quart casserole.
  • Sprinkle the raw rice and dry soup mix over beef.
  • Blend the cream of mushroom soup and water together and pour over the rice.
  • Sprinkle green onions over the top if using or save some to use as a garnish when serving.
  • Cover and bake for one hour at 350 degrees.
  • Note: you can stir the casserole after 30 minutes if desired, but it is not necessary.

Tips:

  • Utilize Leftovers: This versatile casserole welcomes leftover cooked ingredients, such as rice, vegetables, and proteins. Clean out your fridge and create a unique dish every time.
  • Season Generously: Don't be shy with the seasonings. A flavorful combination of salt, pepper, garlic powder, onion powder, and dried herbs will elevate the casserole's taste.
  • Cheese Varieties: Feel free to mix and match different cheeses to create your desired flavor profile. Cheddar, mozzarella, Parmesan, and Gruyère are all excellent choices.
  • Canned or Fresh Vegetables: Both canned and fresh vegetables work well in this casserole. Frozen veggies can also be used if thawed and drained properly.
  • Customize the Protein: Whether you prefer ground beef, chicken, sausage, or plant-based alternatives, the casserole adapts to your protein preference.
  • Vegetable Stock or Water: If you don't have vegetable stock on hand, water can be used instead. However, vegetable stock adds an extra layer of flavor to the casserole.
  • Adjust Liquid: Depending on the moisture content of your ingredients, you may need to adjust the liquid. Start with the recommended amount and add more if needed.
  • Cooked Rice: Make sure to use cooked rice, not uncooked. Otherwise, the rice will not cook properly in the casserole.
  • Baking Dish Size: Use a 9x13 inch baking dish to ensure the casserole cooks evenly and doesn't overflow.
  • Baking Time and Temperature: Bake the casserole at 350°F for 30-35 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Conclusion:

The One-and-One Casserole is a versatile and budget-friendly dish that pleases even the pickiest eaters. With its customizable ingredients and simple preparation, it's a perfect weeknight meal or a hearty dish to feed a crowd. Whether you're using leftovers or starting from scratch, this casserole is sure to become a family favorite. So gather your ingredients, preheat your oven, and let's get cooking!
