Time 40m

Number Of Ingredients 15

3/4 cup unsweetened applesauce
2/3 cup honey
2 large eggs
1/3 cup coconut oil (melted & cooled )
1 1/2 teaspoons pure vanilla extract
1 1/2 cups white whole wheat flour
1/4 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1/2 cup old-fashioned rolled oats
Up to 1/2 cup optional mix-ins:
1 1/2 tablespoons coarse sugar (such as raw (turbinado) sugar or sparkling sugar, for sprinkling on top (optional))

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease 10 wells in a standard 12-cup muffin tin with nonstick spray or line with paper liners.
  • In a large bowl, mix together the applesauce, honey, eggs, coconut oil, and vanilla. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
  • Add the flour mixture to the bowl with the wet ingredients and stir just until combined. The batter will be a little lumpy. Gently stir in the rolled oats and any other desired mix-ins.
  • Divide evenly among the muffin cups, filling each almost to the top. Sprinkle the tops with coarse sugar, if desired. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and place the muffin tin on a wire rack to cool for 10 minutes, then gently remove the muffins from the pan (run a butter knife around the edges if the muffins are sticking) and let them cool completely on the wire rack.

APPLESAUCE MUFFINS

Unsweetened applesauce, whole-wheat flour and toasted walnuts make these warmly spiced muffins a wholesome breakfast or afternoon snack. They are best served warm the day they are baked, but since they are made with oil, they will also stay soft and moist for a couple of days in an airtight container on the counter.

Time 40m

Yield 12 muffins

Number Of Ingredients 13

3/4 cup plus 1 tablespoon/165 grams granulated sugar
2 teaspoons ground cinnamon
2 large eggs
1 cup/250 grams unsweetened applesauce
1/2 cup/105 grams canola or other neutral oil
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt (Diamond Crystal)
1 cup/128 grams all-purpose flour
1 cup/130 grams whole-wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup/90 grams toasted walnut halves, finely chopped
1 small honeycrisp or other baking apple, peeled and cut into roughly 1/4-inch pieces, about 3/4 cup/80 grams (optional)

Steps:

  • Set a rack in the center of the oven and heat to 350 degrees. Line a 12-cup standard muffin tin with paper liners. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon, and set aside.
  • In a large bowl, whisk the eggs and remaining 3/4 cup/150 grams sugar until light and foamy.
  • Add the applesauce, oil, remaining 1 1/2 teaspoons cinnamon, nutmeg and salt, and whisk to combine.
  • Add the all-purpose flour, whole-wheat flour, baking powder and baking soda to the bowl. Fold until a few streaks of flour remain, then add two-thirds of the walnuts and all of the chopped apple, if using. Fold until well combined and no streaks of flour remain.
  • Divide the mixture among the 12 liners; they will be almost full to the top. Sprinkle with the remaining one-third of the walnuts and reserved cinnamon sugar.
  • Bake until muffin tops are puffed and golden, and a skewer inserted into the center comes out clean, 15 to 22 minutes. Let cool slightly before removing from the pan. These are best the day they are made, but will last a day or two on the counter in an airtight container. Alternatively, let the muffins cool completely, then transfer to an airtight container and freeze.

Tips:

  • To make your applesauce muffins extra moist, use freshly grated apples instead of store-bought applesauce. This will give the muffins a more intense apple flavor and a tender, fluffy texture.
  • If you don't have any buttermilk on hand, you can make your own by adding 1 tablespoon of lemon juice or vinegar to a cup of regular milk. Let it sit for 5 minutes before using.
  • Be sure to measure your flour correctly. Too much flour will make the muffins dry and dense. To measure flour properly, spoon it into the measuring cup and level it off with a knife.
  • Don't overmix the batter. Overmixing will develop the gluten in the flour, which will make the muffins tough. Mix the batter just until the ingredients are combined.
  • Fill the muffin cups only 2/3 full. This will allow the muffins to rise properly without overflowing.
  • Bake the muffins at a high temperature initially, then reduce the temperature to finish baking. This will help the muffins to rise quickly and then brown evenly.
  • Let the muffins cool completely before frosting them. This will help the frosting to set properly.

Conclusion:

These applesauce muffins are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are moist, fluffy, and full of apple flavor. With a few simple tips, you can make these muffins even better. So next time you're looking for a quick and easy muffin recipe, give these applesauce muffins a try.
