1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) 1 cup tomato juice
¾ cup rolled oats
1 egg

2 lbs ground beef
1 lb sausage, such as jimmy dean (not links, but the kind you make into patties)
2 eggs
29 ounces diced tomatoes, divided use
2/3 cup uncooked oatmeal
1/2 cup breadcrumbs
3 teaspoons onion powder
1 1/2 teaspoons salt
3/4 teaspoon black pepper
6 tablespoons Worcestershire sauce
2 green peppers, diced

Steps:

  • Beat eggs.
  • Add 1 1/2 cans tomatoes (reserve 1/2 can for top of loaves).
  • Add Worcestershire, onion powder, salt and pepper.
  • Mix above with meats, oatmeal, and bread crumbs.
  • Mix in green pepper.
  • Shape into two loaves.
  • Place in loaf pans sprayed with Pam.
  • Arrange the rest of canned tomatoes on top of loaves.
  • Bake at 350 for about 1 hr and 15 minutes.

1 tablespoon barbecue sauce
1 dash liquid smoke flavoring
1 tablespoon distilled white vinegar
¼ cup ketchup
1 tablespoon brown sugar
2 teaspoons prepared mustard
2 dashes liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 batch Sauce Ingredients
4 Shallots, minced
2 tablespoon butter
1 sprig thyme,
1 bay leaf
1 dash crushed black pepper
1 cup dry white wine
1 cup beef or veal stock
1 cup chicken stock
1 salt and pepper

  • Saute onion, green onion, celery, carrot, green pepper, red pepper and garlic in butter until veggies are soft and liquid is absorbed. Cool and Reserve.
  • Combine salt, cauenne, black pepper, white pepper, cumin, and nutmeg: Add to vegggie mixture. Stir in half and half, catsup, beef, prok, eggs, and bread crumbs. Mix well.
  • Form into loaf and place on greased baking sheet, 9x5 loaf pan, or other similar sized pan. Bake at 350 degrees for 45 to 50 minutes. Let stand 10 minutes before slicing. Pour off excess fat. Slice and serve with gravy.
