1 package (30 ounces) frozen shredded hash brown potatoes, thawed
1 pound cubed fully cooked ham or 1 pound bulk pork sausage, cooked and drained
1 medium onion, chopped
1 medium green pepper, chopped
1-1/2 cups shredded cheddar cheese
12 large eggs
1 cup 2% milk
1 teaspoon salt
1 teaspoon pepper

Steps:

  • In a greased 5- or 6-qt. slow cooker, layer half of each of the following: potatoes, ham, onion, green pepper and cheese. Repeat layers., Whisk together remaining ingredients; pour over top. 12 eggs, well beaten
1 teaspoon salt
pepper
1 (16 ounce) container cottage cheese
1 small onion, grated
1/2 large green pepper, diced (optional)
1/2 lb mushroom, thinly sliced
1/2 cup all-purpose flour
1 teaspoon baking powder
1 lb cheddar cheese, grated
1/2 cup margarine or 1/2 cup butter, melted
spinach (optional)
2 tomatoes, thinly sliced
parsley flakes, for garnish

Steps:

  • Grease a 9X13 baking dish.
  • Mix together flour, salt, baking powder, and pepper.
  • Add to the beaten eggs.
  • Mix in the cottage cheese, cheddar cheese, onion, the mushrooms and spinach and melted butter.

  • Preheat oven to 350 degrees F (175 degrees C).

2 c herb croutons (italian flavored works well, but not garlic)
8 large eggs
3/4 c milk
1 Tbsp italian seasoning
1 dash(es) hot sauce (optional)
1 tsp salt
1/2 tsp pepper
3/4 c diced ham
1/2 c chopped spinach
1 1/2 c grated swiss cheese

Steps:

  • 1. Preheat oven to 350 degrees. Spray glass 9x13 casserole dish with non-stick spray. Spread croutouns out in the bottom of the pan until it forms a thin layer.
  • 2. In large bowl combine eggs, salt, pepper, italian seasoning, milk, and hot sauce. Wisk throroughly until eggs are well beaten.
  • 3. Chop spinach, dice ham, grate cheese. Save 1/2 cup of cheese and set aside. Add remaining to eggs and mix in well.
  • 4. Pour mixture over croutons, pouring slowly so layer of croutons does not shift and spinach, ham and cheese is evenly distributed.
  • 5. Sprinkle last 1/2 cup of cheese evenly over top of casserole. Bake 25-30 minutes or until eggs have set all the way through to the center.
  • 6. Try different variations on ingredients! This is my favorite, but my family also likes sausage and sharp cheddar, bacon and cheddar, also good with mushrooms, onions, peppers, etc. Whatever your family's favorite omelet ingredients are!

This is a great breakfast casserole for large groups. I got this from a sweet lady and her cookbook, Betty "Winks" at Cooking. She did cooking demos at a local department store I worked at in Little Rock, AR. I have made it several times and there is never any left. Great for holidays and deer camp. Goes great with hash browns and biscuits! You can also substitute a can of Rotel tomatoes for the stewed tomatoes and bell pepper.

1 dozen egg, beaten
1 bell pepper, diced
1 (16 ounce) can stewed tomatoes, drained
1/2 lb bacon, fried & crumbled
