CROSTINI WITH LUMP CRAB SALAD AND EXTRA VIRGIN OLIVE OIL

Crostini with Lump Crab Salad and Extra Virgin Olive Oil image

Yield Makes 4 to 6 servings

Number Of Ingredients 8

1 pound fresh lump crabmeat
1/2 cup extra virgin olive oil, plus more for drizzling
1 roasted red bell pepper, seeded and diced
1 tablespoon minced fresh chives
1 tablespoon torn fresh basil
Juice and grated zest of 1 lemon
Kosher salt and cracked black pepper
8 to 12 slices Rick's Basic Crostini

Steps:

  • 1. Pick through the crabmeat to remove any bits of shell. Transfer to a nonreactive bowl.
  • 2. Add the 1/2 cup of olive oil, bell pepper, chives, basil, lemon juice and zest and mix well. Season to taste with salt and pepper.
  • 3. Top each crostini with about 1 tablespoon of the crab mixture. Drizzle with olive oil and serve.

Tips:

  • Choose the right olives: For the best flavor, choose olives that are firm and plump, with no blemishes or bruises. Kalamata, Niçoise, and Castelvetrano olives are all good choices for olive salad.
  • Use a variety of olives: Using a mix of different types of olives will give your salad a more complex flavor. Try combining green and black olives, or olives from different regions.
  • Don't overcook the artichokes: Artichokes should be cooked until they are tender but still have a slight bite to them. Overcooked artichokes will be mushy and bland.
  • Use fresh herbs: Fresh herbs, such as basil, oregano, and thyme, will add a bright, flavorful touch to your olive salad. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use less, as they are more concentrated.
  • Serve immediately: Olive salad is best served immediately after it is made. The flavors will meld together over time, but the salad will lose its freshness if it sits for too long.

Conclusion:

Olive salad is a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. It is a great way to use up leftover olives and artichokes, and it is also a healthy and flavorful option for vegetarians and vegans. With its simple ingredients and easy preparation, olive salad is a perfect dish for any occasion.
