- In a large bowl mix together the warm water (110 degrees), yeast, sugar, salt, and olive oil. Stir in 2 cups of the flour in order to make a soft ball. Knead in additional flour so that dough is soft and not sticky. Place kneaded dough in a medium size greased bowl. Cover and let rise until doubled in size.
- Punch down dough, and form into ball or loaf shape. Place onto a greased cookie sheet. Cover and let rise for 15 to 20 minutes. Preheat the oven to 375 degrees F (190 degrees C).
- Bake in the preheated oven for 30 to 40 minutes, until golden brown.

OLIVE LOAF
Steps:
- Preheat the oven to 375 degrees F.
- Spray a standard nonstick loaf pan with vegetable spray, line with parchment paper, and set aside.
- Place flour and the baking powder in the bowl of a food processor and pulse for 5 seconds. Pour the dry ingredients into a large mixing bowl. Stir in the olives and tapenade.
- Whisk together the eggs, olive oil, milk, honey and salt. Add this mixture to the dry ingredients and stir to combine; do not mix until smooth. Pour the mixture into the prepared loaf pan and place in the oven. Bake for 75 to 80 minutes, until the internal temperature is 210 degrees F, or a toothpick inserted into the middle comes out clean.
- Remove the loaf from the pan and allow to cool on a rack before serving.

- 1/2 pound pitted mixed olives
- 2 anchovy fillets, rinsed
- 1 small clove garlic, minced
- 2 tablespoons capers

- For the sourdough version
- The night before you plan to bake, mix a 56% hydration sourdough starter weighing 250g. Knead it on the counter for 1-2 minutes, and then place it in a jar with room for tripling. Cover and leave it somewhere warm. This stiff starter can be created from a single feed of 40g 100% hydration starter, 140g bread flour, and 70g water.

- Just before mixing your dough, put a portion of the recipe's water in a small bowl with the yeast and a pinch of sugar. Let the yeast dissolve and foam up.

- In a medium bowl (ideally with a pouring spout), measure out the water, sugar, orange blossom water, salt, and ground anise.
- While the sugar and salt begin dissolving, zest and juice the orange, straining out seeds and pulp.
- Stir a bit and then add the oil.
- In the bowl of a stand mixer, briefly whisk your flour and instant yeast - OR - add the stiff starter in chunks to your flour. If you chose to proof your yeast, you can simply pour the mixture over the flour.
- Add the orange mixture to your stand mixer bowl and begin mixing using the dough hook attachment.
- Mix 5-8 minutes, initially on low speed and then low-med. Pause once early on to scrape down the sides of the bowl. The dough should be smooth and only slightly sticky to the touch toward the end of mixing.
- If you don't have a stand mixer, mix by hand or with a spatula, and then slap and fold the dough for gluten development. Videos of this technique can be found here.
- First Rise
- Transfer the dough to a lightly oiled bowl. Cover and let rise in a warm place (ideally at temps in the low 80s) until about doubled. This was 3 1/2 hours with instant yeast, and 8 hours with sourdough.
- Shaping
- Scrape the dough onto your countertop. There's no need to flour or oil it. Divide the dough in two pieces and roll them into balls.
- Cover the dough balls with a large piece of plastic wrap (you'll reuse this) and let them rest for about 20 minutes.
- Prepare a large baking sheet with parchment paper. You can also prepare two parchment squares and bake the breads one at a time on a smaller baking sheet.
- Using a rolling pin, roll the dough balls into circles about 8 inches in diameter and 1/2 inch thick.
- Transfer the circles to the parchment paper, and make cuts in the dough as if it were pie but without reaching the center or the edges. Open the cuts a bit with your tool (spatula) or your fingers.
- Final Proof
- Cover the dough with your sheet of plastic wrap and let it rise in a warm place until puffy, almost twice as tall. This was 1 1/2 hours for instant yeast, and 4 hours for sourdough.
- Baking
- Preheat your oven to 400°F with a shelf in the center position.
- Bake the pompe à l'huile for 16-18 minutes or until the internal temp is over 200°F. If your fermentation times were long, the color of the breads may be lighter despite the interior being cooked through.
- Lightly brush the breads with olive oil to help them stay soft longer.
- Let the pompe à l'huile cool on a rack for about 20 minutes, then sprinkle powdered sugar on them if desired.
- The breads can be wrapped for storage, and softened through reheating in the microwave for 10-15 seconds.

- Add the ingreadients to your bread machine according to its instructions. Add water to the olive juice until you get 1 1/4 cups of liquid. I prefer the rosemary, but it is optional.
- You can either bake the bread in your bread machine or in the oven.
- To bake in the oven, use the dough setting on the bread machine. Place the bread in a greased 9x5 inch loaf pan, cover with a towel and let rise for an extra 30 minutes or so. Bake at 400 degrees for 30 minutes.

Made with extra-virgin olive oil, this challah is especially rich and complex tasting. A little bit of grated citrus zest, if you choose to use it, adds a welcome brightness to the soft, slightly sweet loaf, which is also flavored with orange juice. (Don't use store-bought orange juice with preservatives; it can inhibit yeast growth. It's best to squeeze the oranges yourself.) If you'd prefer a more classic challah, substitute a neutral oil such as safflower or grapeseed for the olive oil and leave out the zest. This recipe makes one large loaf (about 1 pound). Feel free to double it if you're feeding a crowd or if you'd like to toss one loaf into the freezer, where it will keep well for up to 3 months.

- In the bowl of an electric mixer, combine orange juice and 1 tablespoon water. Sprinkle yeast over top and let sit until frothy, about 5 minutes.
- Add oil, 2 eggs, 1 yolk, the sugar, the salt and the zest, if using, and beat with a dough hook until just combined. Add in flour, 1 cup/125 grams at a time, until dough comes together into a sticky mass. You may or may not use all of the flour, so at the end, add it gradually. The dough should come away from the sides of the bowl but not be at all stiff. You're looking for a slightly sticky, soft dough.
- Transfer dough to floured work surface and knead until smooth, about 5 minutes. Transfer to an oiled bowl and turn the dough over. Cover bowl with a clean dish towel and let rise in a draft-free place until doubled, about 1 1/2 to 3 hours, depending on the temperature in your kitchen. (It may take longer in colder kitchens.) Press down dough to expel all the air, cover bowl, and let rise for another 45 minutes.
- In a small bowl, make egg wash by combining the remaining 1 egg with 1 teaspoon water. To make a classic braided challah, cut dough into three equal pieces and roll them each into ropes 12 inches long. Or, to make a braided round loaf, cut dough into six equal pieces and roll them each into thinner ropes 12 inches long.
- Braid the challah: If you are making a classic challah with three ropes, just braid them into a loaf, tucking the edges under. To braid it into a round loaf, first lay three ropes parallel to one another on the work surface, leaving 1 inch between them. Take one of the remaining ropes and hold it perpendicular to the three ropes, across the center. Weave that rope through the three ropes, as if you were creating a lattice for a pie; leave the edges free. Repeat with remaining two ropes. The resulting shape should look somewhat like a pound or number sign, but with a woven center. Then, starting from the ends of the three ropes closest to you, braid the loose edges of the ropes and pinch the ends together. Repeat with the remaining ends of the ropes; you should end up with a lattice in the middle with 4 braids radiating out from it. Tuck the braids underneath the lattice to create a round loaf, place on a small rimmed baking sheet, then brush with egg wash. Let rise uncovered for 45 minutes.
- Meanwhile, heat oven to 375 degrees with a rack in the middle. Gently brush a second coat of egg wash on the dough, then bake for 25 to 35 minutes, until challah is a deep rich brown and the bottom sounds hollow when tapped. (When it starts smelling like freshly baked bread, start checking.) Cool on a wire rack before serving.
