Tips:

  • Use fresh hominy: Canned hominy can be used in a pinch, but fresh hominy has a much better flavor and texture. You can find fresh hominy at most Latin American markets.
  • Soak the hominy overnight: This will help to soften the hominy and make it more digestible. If you don't have time to soak the hominy overnight, you can quick-soak it by boiling it for 30 minutes.
  • Use a variety of vegetables: This will add flavor and texture to the casserole. Some good choices include onions, bell peppers, corn, and black beans.
  • Season the casserole well: Don't be afraid to use plenty of spices and herbs. Chili powder, cumin, oregano, and garlic powder are all good choices.
  • Top the casserole with cheese: This will give the casserole a golden brown crust and a delicious cheesy flavor. You can use any type of cheese you like, but cheddar, Monterey Jack, and Pepper Jack are all good choices.

Conclusion:

Old-school hominy casserole is a delicious and hearty dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste. So next time you are looking for a comforting and satisfying meal, give old-school hominy casserole a try. You won't be disappointed!
