Time 1h20m

Number Of Ingredients 9

8 Tablespoons Unsalted Butter ((softened))
2 Eggs ((large))
3 Bananas ((ripe & large sized))
2 Cups Flour ((all purpose flour))
1 Cup White Granulated Sugar
1 Teaspoon Vanilla Extract
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder ((aluminum free))
1/2 Teaspoon Salt

Steps:

  • Preheat oven to 325 degrees F.
  • Mash bananas with a fork.
  • Soften butter in a microwave.
  • Stir eggs, bananas and butter together.
  • Mix in remaining ingredients. Stir until the batter is fully mixed.
  • Optional - If you want to enhance this easy "basic" banana bread, you can stir in 1 cup of your family's favorite dessert ingredient (i.e. chocolate chips or chopped walnuts) after you have mixed the batter.
  • Pour the finished batter into a nonstick bread pan. Smooth out the top of the batter within the bread pan.
  • Bake in the oven for 65-70 minutes or until golden brown.
  • Take out of oven and let the banana bread cool down in the bread pan for 10 minutes. Do not remove the banana bread from the bread pan during this 10 minute cool down period. Use oven mitts as the bread pan will be very hot coming out of the oven.
  • After 10 minutes, remove the banana bread from the bread pan. Place the banana bread on a cooling rack in order to completely cool. This cool down may take 1-2 hours. Gently slide a silicon spatula between the banana bread and the bread pan walls if the banana bread is stuck in the pan.

Time 1h30m

Yield 1 loaf

Number Of Ingredients 13

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Look for bananas with dark yellow skin and brown spots.
  • Mash the bananas thoroughly: Use a fork or potato masher to mash the bananas until they are smooth and creamy. This will help to create a moist and tender banana bread.
  • Use melted butter: Melted butter will help to keep your banana bread moist. If you use cold butter, it will not mix evenly into the batter and your banana bread will be dry.
  • Don't overmix the batter: Overmixing the batter will make your banana bread tough. Mix just until the ingredients are combined.
  • Bake the banana bread at the right temperature: The ideal temperature for baking banana bread is 350 degrees Fahrenheit (175 degrees Celsius). If you bake the banana bread at a higher temperature, it will be dry and overcooked.
  • Let the banana bread cool completely before slicing: Cutting into the banana bread while it is still warm will cause it to crumble. Let the banana bread cool completely on a wire rack before slicing and serving.
