PARMESAN CORNBREAD PUFFS

Parmesan Cornbread Puffs image

These light-tasting cornmeal muffins are coated with grated parmesan cheese after they are baked. Serve them with a bowl of chili or hearty soup. Taken from the "Quick, Healthy and Delicious Cooking" cookbook by BH&G. Updated: After one reviewer brought to my attention that using larger muffin tins resulted in very small "caps", I mentioned that I tend to use smaller muffin tins for this recipe. You of course, can decide which you prefer.

CORNMEAL MUFFINS

Cornmeal Muffins image

I don't like my cornmeal muffins to be really crunchy, so I warmed up the milk and let the cornmeal soak. I ended up with a muffin that's crispy on the outside and just the right texture on the inside. These tasted just like the ones I first made in home ec. class. If you like the idea of cornmeal muffins but not the texture (gritty) these are for you. They are for us.

Tips:

  • Use fresh cornmeal. Fresh cornmeal will give your muffins a better flavor and texture than old cornmeal.
  • Grind your own cornmeal if possible. This will give you the freshest cornmeal possible and allow you to control the texture of your muffins.
  • Use buttermilk instead of regular milk. Buttermilk will give your muffins a tangy flavor and help them rise higher.
  • Don't overmix the batter. Overmixing will make your muffins tough.
  • Bake the muffins at a high temperature. This will give them a crispy crust and a fluffy interior.
  • Let the muffins cool completely before serving. This will help them hold their shape.

Conclusion:

Old Pecos Cornmeal Muffins are a delicious and easy-to-make breakfast or snack. They are perfect for using up leftover cornmeal, and they can be customized with a variety of different ingredients. So next time you're looking for a quick and easy breakfast or snack, give Old Pecos Cornmeal Muffins a try. You won't be disappointed!
