Categories     Quick Breads

Time 55m

Yield 12 muffins

Number Of Ingredients 10

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 cup butter
1/4 cup shortening
1/2 cup milk
1/2 teaspoon vanilla
2 eggs, beaten
1 1/2 cups blueberries

Steps:

  • Preheat oven to 400 degrees.
  • In medium bowl, combine dry ingredients and mix well.
  • Cut in butter and shortening until mixture resembles fine crumbs.
  • Combine milk, vanilla and eggs and blueberries.
  • Add to dry mix until just moistened.
  • Spoon into prepared pan filling each cup 3/4 full.
  • Bake 30-35 minutes.
  • Cool five minutes before serving.
  • *Variation: leave out the blueberries and reduce cooking time to 20-25 minutes.

Tips:

  • Use fresh corn. Fresh corn will give your muffins the best flavor. If you can't find fresh corn, you can use frozen or canned corn, but the flavor will be slightly less pronounced.
  • Don't overmix the batter. Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Bake the muffins at a high temperature. This will help them rise quickly and give them a golden brown crust.
  • Let the muffins cool before serving. This will help them to set and make them easier to handle.
  • Serve the muffins with your favorite toppings. Butter, honey, jam, or fruit are all delicious options.

Conclusion:

These old-fashioned sweet corn muffins are a delicious and easy-to-make treat. They're perfect for breakfast, lunch, or dinner, and they're sure to be a hit with everyone who tries them. So next time you're looking for a simple and satisfying recipe, give these muffins a try!
