1/4 cup extra-virgin olive oil
2 cloves garlic, thinly sliced
1 large red onion, cut into 2-inch chunks
2 red bell peppers, cored, seeded, and cut into 2-inch chunks
2 green bell peppers, cored, seeded, and cut into 2-inch chunks

1 cup milled or crushed canned Italian plum tomatoes
1 1/2 cups dry red wine
1 pinch of dried oregano
Salt and freshly ground pepper

Steps:

  • In a large skillet with a lid, heat the olive oil over medium-high heat. Add the garlic, onion, and peppers, and cook, stirring, until the onion is translucent, about 5 minutes. Add the sausages, and cook about 4 minutes more, until sausages begin to brown. Add the tomatoes, wine, oregano, and a large pinch of salt. Tips:

  • Use high-quality sausage: The sausage is the star of the show in this dish, so make sure to use a good-quality sausage that is flavorful and has a nice texture. Italian sausage is a classic choice, but you can also use other types of sausage, such as chorizo, bratwurst, or kielbasa.
  • Use fresh peppers: Fresh peppers will give your dish the best flavor. If you can't find fresh peppers, you can use frozen peppers, but they will not be as flavorful.
  • Slice the peppers thinly: This will help them cook evenly and will also make them easier to eat.
  • Saute the peppers before adding the sausage: This will help them to soften and caramelize, which will add a lot of flavor to the dish.
  • Cook the sausage until it is browned: This will help to develop the flavor of the sausage and will also make it less greasy.
  • Add the peppers to the sausage and cook until they are tender: This will take about 15 minutes, depending on the type of peppers you are using.
  • Season the dish to taste: Add salt, pepper, garlic powder, and onion powder to taste.
  • Serve the dish over rice, pasta, or mashed potatoes: This will help to soak up the delicious sauce.

Conclusion:

Sausage and peppers is a classic dish that is easy to make and always a crowd-pleaser. This recipe is a great way to use up leftover sausage, and it is also a great way to get your kids to eat their vegetables. Serve it over rice, pasta, or mashed potatoes, and you have a complete meal that is sure to satisfy everyone at the table.
