Steps:
- Combine raisins with water, and simmer for 10 minutes.
- Add oats and all other remaining ingredients; blend, then beat at medium speed for 1 minute.
- Spread evenly in greased 13x9" pan, and bake at 350F (375 at high altitude) until top springs back when touched lightly in the center (15-20 minutes).
Tips:
- Make sure to use fresh ingredients for the best flavor and texture.
- Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the mixture, making the bars more tender.
- Gradually add the eggs one at a time, beating well after each addition. This will help to prevent the mixture from curdling.
- Stir in the flour, baking powder, and salt until just combined. Overmixing will toughen the bars.
- Fold in the raisins. Be gentle to avoid breaking them up.
- Pour the batter into a greased 9x13 inch baking pan. If your using mini loaf pans grease and flour the pan.
- Bake the bars in a preheated oven until a toothpick inserted into the center comes out clean. This usually takes around 35-40 minutes.
- Let the bars cool completely before frosting. This will help to prevent the frosting from melting.
- If you don't have time to make the frosting, you can simply sprinkle the bars with powdered sugar before serving.
Conclusion:
Old fashioned raisin bars are a classic dessert that is easy to make and always a hit with everyone. They are perfect for any occasion, from a casual get-together to a special holiday gathering. With their chewy texture, sweet raisins, and creamy frosting, these bars are sure to be a favorite.
