Yield 60

Number Of Ingredients 5

2 cups white sugar
½ cup cocoa
1 cup milk
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Grease an 8x8 inch square baking pan. Set aside.
  • Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
  • Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
  • Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
  • Pour into prepared pan and let cool. Cut into about 60 squares.

Tips:

  • Use fresh pumpkin puree: Fresh pumpkin puree will give your fudge a more intense pumpkin flavor. You can make your own puree by roasting and pureeing a sugar pumpkin, or you can use canned pumpkin puree.
  • Don't overcook the fudge: Fudge is a delicate candy, and it's easy to overcook it. Once the fudge has reached the soft-ball stage (235 degrees Fahrenheit), remove it from the heat immediately.
  • Let the fudge cool completely before cutting it: Fudge needs to cool completely before it can be cut into pieces. If you cut it too soon, it will be too soft and sticky.
  • Store the fudge in an airtight container: Fudge can be stored in an airtight container at room temperature for up to two weeks. You can also store it in the refrigerator for up to four weeks, or in the freezer for up to six months.

Conclusion:

Old-fashioned pumpkin fudge is a delicious and easy-to-make treat that is perfect for fall. With its rich pumpkin flavor and creamy texture, this fudge is sure to be a hit with everyone who tries it. So next time you're looking for a sweet treat, give this old-fashioned pumpkin fudge a try. You won't be disappointed.
