BAKED OATMEAL FOR A CROWD WITH BERRIES AND SEEDS
When mixed berries get baked into creamy, cinnamon-spiced oats, the result is this warming breakfast casserole that can feed a crowd in one fell scoop. Chopped dates provide sweetness the natural way, while crunchy toasted pepitas and hemp seed hearts offer a big helping of omega-3 fatty acids.

GRANDMA'S OLD FASHIONED OATMEAL
This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

Steps:
- Bring the 2 1/2 cups water to a boil.
- Then add the salt.
- While stirring constantly, gradually add the oatmeal.
- Continue to stir the oatmeal and add the sugar and cinnamon.
- Cook 1 minute and add the evaporated milk.
- After adding the evaporated milk reheat to boiling.
- Pour oatmeal in a serving dish and top with the butter and brown sugar.
Tips:
- Use old-fashioned oats, not quick-cooking or instant oats. Old-fashioned oats have a chewier texture and will hold their shape better in the casserole.
- Don't overcook the oats. Oats should be cooked until they are tender but still have a little bite to them. Overcooked oats will be mushy.
- Use a large baking dish. The casserole will rise during baking, so it's important to use a dish that is large enough to accommodate it.
- Let the casserole cool for a few minutes before serving. This will help it to set and make it easier to slice.
- Serve the casserole with your favorite toppings. Some popular toppings include maple syrup, brown sugar, butter, fruit, and nuts.
Conclusion:
Old-fashioned oatmeal casserole is a classic breakfast dish that is easy to make and can be enjoyed by people of all ages. It is a good source of fiber, protein, and other nutrients. This casserole is also a great way to use up leftover oats. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying breakfast casserole that will warm you up on a cold morning.
