BASIC LAMB STEW WITH VEGETABLES
Steps:
- Gather the ingredients.
- Trim the fat from the lamb chops, then cut the meat into 1-inch pieces. Place the meat and bones in a stockpot or Dutch oven; barely cover the meat with about 1 1/4 cups water. Cover the pan and simmer for 45 minutes (do not boil).
- Add the potato, carrots, onion, celery, green pepper, and optional rutabaga with salt and pepper to the meat in the Dutch oven.
- Cover and simmer for 20 to 30 minutes, until meat and vegetables are tender.
- Using tongs, remove the bones to a bowl and discard.
- Remove the Dutch oven from the heat.
- Mix the flour and cold water. Stir the mixture into the stew. Return to heat. Cook, stirring until the stew is thickened.
- Add the chopped parsley and taste and adjust the seasonings.
- Serve the stew hot. You'll want some biscuits, rolls, or bread to sop up the stew. It's also nice to start with a green salad. Good wines to pair with lamb stew are those that are simple red blends that aren't too tannic. Or, you can pair it with a British pale ale. Refrigerate any leftovers and use within three to four days. The stew reheats well in the microwave for lunch or dinner. If you don't think you can finish the leftovers in that time, freeze the stew in an airtight container. Frozen stew will maintain the best quality for four to six months.

TRADITIONAL LAMB STEW
Our friend Missy married a young man from Ireland. When he finished his schooling here in the states they moved to Ireland. She has sent me several recipes from her husband's family. My favorite is the Lamb Stew which doesn't have to just for St. Patrick's Day.

Steps:
- 1. Preheat the oven to 350-degrees. Heat half the oil in a large frying pan, then fry the shallots until golden, turning often. Remove and set aside.
- 2. Add the rest of the oil to the pan, then fry the lamb over a high heat until well browned. Place the meat, onions and herbs in a 4.8 litre casserole dish.
- 3. Mix the lamb stock or water with the Worcestershire sauce, then pour over the meat. Place the dish in the oven and bake for an hour.
- 4. Remove the dish from the oven and add the potatoes and carrots into the stew. Lower the oven's temperature to 250-degrees, add the carrots and potatoes to the mix and cook the stew for another 2 hours.
- 5. [Optional step] When the vegetables are cooked and the meat is tender, drain the sauce in another pot and heat it on the hob (stove top). Mix the corn flour with a bit of water and slowly add it to the sauce, stirring constantly until it has thickened. Add the sauce to the meat and vegetables again. If by any chance the vegetables (if they are really chunky) are not completely cooked after 2 hours, place it back in the oven at the same temperature and give it a little bit more time. It won't do any harm! Instead of using cornflour you can grate some potato and add it to the pot 10 minutes before cooking is complete. It will have more flavour this way. Scatter with chopped parsley and serve.

CHEF JOHN'S IRISH STEW
Pay attention to the cut of lamb used in this recipe. I used lamb shoulder chops, which are a fantastic value, when you consider flavor, useable meat, and price. They will probably be the cheapest lamb at the store, have more flavor and richness than leg meat, and are cheaper than shanks and loins. It takes a while for the meat to braise and fall off the bone, but it's a wait rewarded with tender, succulent chucks of lamb.

Tips:
- Choose the right cut of lamb. Lamb shoulder or leg is best for stewing as it has a good amount of fat and connective tissue, which will break down during cooking and make the meat tender and flavorful.
- Brown the lamb before stewing. This will help to develop the flavor of the meat and give the stew a richer color.
- Use a variety of vegetables. This will add flavor and texture to the stew. Some good choices include carrots, potatoes, celery, and onions.
- Add some herbs and spices. This will help to enhance the flavor of the stew. Some good choices include rosemary, thyme, sage, and bay leaves.
- Simmer the stew for at least 1 hour. This will allow the meat and vegetables to become tender and the flavors to meld together.
- Serve the stew with a side of mashed potatoes or rice. This will help to soak up the delicious sauce.
Conclusion:
Old-fashioned lamb stew is a hearty and flavorful dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a delicious lamb stew that your family and friends will love.
