2 medium tart apples
1/4 cup dried cranberries
2/3 cup water
1/4 cup packed brown sugar
1 tablespoon honey
Optional: Vanilla ice cream or sweetened whipped cream

Steps:

  • Preheat oven to 350°. Core apples, leaving bottoms intact; peel top third of each. Place in a greased 8x4-in. glass loaf pan; fill with cranberries., In a small saucepan, combine water, brown sugar and honey; cook and stir over medium heat until sugar is dissolved. Pour over apples., Bake, uncovered, until apples are tender, 35-40 minutes, basting occasionally with juices. If desired, serve with ice cream.

½ cup brown sugar
4 tablespoons butter
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.

1 ½ cups fresh cranberries
2 ¼ cups water
¾ cup packed brown sugar
3 tablespoons honey
6 scoops vanilla ice cream

1/4 cup diced candied ginger or 1/4 cup diced dried apricot
1/4 cup brown sugar or 1/4 cup maple sugar
1/2 teaspoon cinnamon
1 tablespoon cold butter, cut into 4
1/4 cup maple syrup or 1/4 cup honey
1/4 cup apple juice or 1/4 cup water

Steps:

  • Remove the core of the apples with an apple corer or small knife, leaving about 1/2" at the base.
  • Peel the top one third with a vegetable peeler or sharp knife.
  • Place apples in an 8" square baking dish or in another ovenproof pan that holds them snugly.
