DARK MOLASSES GINGERBREAD WITH WHIPPED CREAM

Dark Molasses Gingerbread With Whipped Cream image

This gingerbread, from the chefs Edna Lewis and Scott Peacock, is just wonderful: a little spicy, a little sweet, very simple to make, and absolutely delicious. Whipped cream is an easy topping, although dulce de leche or another warm, caramel-y sauce takes it to a special place. But it's also kind of nice plain, wrapped in waxed paper and tucked inside someone's lunch.

OLD FASHION GINGERBREAD

Old Fashion Gingerbread image

My dad would always tell me his mother made gingerbread with hot water and that it was dense and rich with molasses. Over the years I looked for such a recipe, to no avail. Then one day I was given a book compiled by an elderly woman who recalled recipes from her childhood in Virginia, and there it was! I made one slight change, substituting shortening for lard. For gingerbread lovers, this classic version is wonderful, whether you eat it hot and dripping with butter or at room temperature.

OLD-FASHIONED GINGERBREAD

Old-Fashioned Gingerbread image

Provided by Ina Garten

Categories     dessert

Time 2h50m

Yield 9 servings

Number Of Ingredients 15

1/4 cup dark rum or water
1/2 cup golden raisins
1/4 pound (1 stick) unsalted butter
1 cup unsulphured molasses
1 cup (8 ounces) sour cream
1 1/2 teaspoons grated orange zest
2 1/3 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon kosher salt
1/3 cup minced dried crystallized ginger (not in syrup)
1 cup confectioners' sugar, optional
2 tablespoons plus 1 teaspoon freshly squeezed orange juice

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8 by 8-inch cake pan and line with parchment paper. Grease and flour the pan.
  • Place the rum and raisins in a small pan, cover and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.
  • Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together in a small bowl. Mix with your hands until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and crystallized ginger to the mixture with a spatula. Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.
  • When the cake has cooled, whisk together the confectioners' sugar and orange juice and pour it onto the gingerbread, allowing it to drip down the sides. Allow the glaze to set. Cut the gingerbread into 9 squares.

Tips:

  • Use high-quality ingredients, especially molasses and ginger, for the best flavor.
  • Creaming together the butter and sugar until light and fluffy helps to incorporate air into the batter, resulting in a softer, more tender gingerbread.
  • Adding the eggs one at a time ensures that they are fully incorporated and helps to prevent the batter from curdling.
  • Be careful not to overmix the batter, as this can result in a tough, dense gingerbread.
  • Bake the gingerbread in a preheated oven to ensure that it cooks evenly.
  • Let the gingerbread cool completely before frosting it, as this will help to prevent the frosting from melting.
  • Store the gingerbread in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.

Conclusion:

This old-fashioned gingerbread recipe is a classic holiday treat that is sure to please everyone at your table. The molasses, ginger, and spices give it a warm, comforting flavor, while the whipped cream frosting adds a touch of sweetness and lightness. Whether you're looking for a festive dessert to serve at your next holiday party or a simple treat to enjoy with your family, this gingerbread recipe is sure to be a hit.
