1/4 cup finely chopped green pepper
2/3 cup chopped red onion
1/2 cup mayonnaise (low fat is fine)
3 tablespoons Dijon mustard
8 hard-boiled eggs, peeled and chopped
1/3 cup chopped fresh parsley
3 -4 radishes, sliced thinly
paprika

Steps:

  • Cook peeled potatoes until tender firm, about 20 minutes.

  • Taste and adjust seasoning, adding more mayonnaise if needed.
  • Garnish with radish slices and paprika.
  • Cool,cover and refrigerate overnight.

Tips:

  • Make sure the eggs are hard-boiled and not soft-boiled. Otherwise, the potato salad will be too runny.
  • Use a large mixing bowl to make the potato salad. You need enough room to mix all of the ingredients together without making a mess.
  • Don't overmix the potato salad. Just mix it until all of the ingredients are combined. Overmixing will make the potato salad mushy.
  • Chill the potato salad for at least 30 minutes before serving. This will allow the flavors to meld together and the potato salad to firm up.
  • Serve the potato salad with your favorite toppings. Some popular toppings include bacon, cheese, hard-boiled eggs, and pickles.

Conclusion:

The old-fashioned egg mock potato salad is a classic recipe that is perfect for any occasion. It is easy to make, delicious, and can be served as a side dish or a main course. This recipe is a great way to use up leftover hard-boiled eggs. The potato salad can be made ahead of time and chilled, which makes it a convenient option for busy weeknights.
