CORN RELISH FOR CANNING

Corn Relish for canning image

A good way to get rid of surplus corn or a really good corn deal-good with brats, dogs, and burgers.

Provided by Diana Adcock

Categories     Corn

Time 54m

Yield 6 Pints

Number Of Ingredients 12

22 ears corn
1 cup chopped red bell pepper
1 cup chopped green bell pepper
1 1/4 cups chopped celery
3/4 cup chopped onion
1 1/2 cups sugar
2 1/2 cups distilled white vinegar
2 cups water
1 teaspoon salt
1 teaspoon celery seed
1 1/2 teaspoons mustard seeds
1/2 teaspoon ground turmeric

Steps:

  • Cook ears of corn in boiling salted water for 4 minutes.
  • Remove and plunge in ice water-strain-and cut corn from cob-you want 10 cups.
  • Combine corn with remaining ingredients in a large pot and simmer for 20 minutes.
  • Immediately pack into clean hot pint jars, leaving 1/2 inch head space; seal.
  • Process for 15 minutes in a boiling water bath.

Tips:

  • Choose the right corn. Fresh, sweet corn is the best choice for this recipe. Avoid using canned or frozen corn, as it will not have the same flavor or texture.
  • Dice the corn kernels finely. This will help the relish to have a more uniform texture and flavor.
  • Use a variety of peppers. This will give the relish a more complex flavor. For a mild relish, use green bell peppers. For a spicier relish, use red or orange bell peppers, or add a jalapeƱo pepper.
  • Don't overcook the vegetables. The vegetables should be crisp-tender, not mushy.
  • Taste the relish before serving. Adjust the seasonings to your liking.

Conclusion:

This old-fashioned corn relish is a delicious and versatile condiment that can be used in a variety of dishes. It is perfect for picnics, potlucks, and barbecues. It can also be used as a topping for tacos, nachos, and burgers. No matter how you choose to use it, this corn relish is sure to be a hit!
