2 cups sugar
1 cup canola oil
4 large eggs
2 cups all purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
4 cups finely grated peeled carrots
1 cup walnuts, toasted, chopped
Maple-Cream Cheese Icing

Steps:

  • Position rack in center of oven and preheat to 350°F. Butter and flour two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Using electric mixer, beat sugar, oil and eggs in large bowl until well blended. Add flour, baking soda, cinnamon, ginger and salt; beat until blended. Stir in carrots and walnuts. Divide batter between pans.
  • Bake cakes until tester inserted into center comes out clean, about 32 minutes. Cool cakes in pans on rack 15 minutes. Run small knife between pan sides and cakes to loosen. Turn cakes out onto racks; cool completely.
  • Place 1 cake layer, flat side up, on platter. Spread 1 cup icing over. Top with second cake layer, flat side down. Spread remaining icing over top and sides of cake. Refrigerate cake 1 hour or up to 1 day. Serve at room temperature.

1 1/2 cups salad oil
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon

1/2 teaspoon ground salt
2 cups all-purpose flour
4 eggs
3 medium firm ripe pears, peeled, cored and diced (about 1 and 1/2 lbs total)
1/2 cup chopped almonds or 1/2 cup walnuts
1/4 cup butter or 1/4 cup margarine, at room temperature
1 (3 ounce) package cream cheese, at room temperature
1 teaspoon vanilla
2 1/2 cups sifted powdered sugar

2 cups sugar
1 cup canola oil
2 cups all-purpose flour
2 to 3 teaspoons ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
2 cups grated carrots
FROSTING:
1/2 cup butter, softened
3 ounces cream cheese, softened
1 teaspoon vanilla extract
3-3/4 cups confectioners' sugar
2 to 3 tablespoons 2% milk
1 cup chopped walnuts, optional
Orange and green food coloring, optional

  • In a large bowl, combine the eggs, sugar and oil. Combine the flour, cinnamon, baking soda, baking powder, salt and nutmeg; beat into egg mixture. CRUST
2 pkg graham crackers crushed (i put mine in the food processor), (inside a box of graham crackers there are 3 packages. you will need 2 of these.)
1 1/2 stick butter, melted
2 tsp ground cinnamon
FILLING
3 pkg cream cheese, room temperature
1 c white sugar
5 eggs room temperature
1 tsp vanilla extract
TOPPING
1/2 c white sugar
2 pkg 8 oz containers sour cream
1/2 tsp vanilla extract

Steps:

  • 1. crust: combine melted butter with graham cracker crumbs and cinnamon with fork and pour into cake pan press mixture into bottom of pan until smooth and partially up the sides of pan until firm. filling: add cream cheese to mixing bowl and beat until no longer in bar form add 1 egg and beat on high until combined and smooth add some of the sugar and beat on high till combined continue to add eggs and sugar separately., beating in between add vanilla and beat mixture on high for 2 minutes pour into crust and level out bake at 300 for 1 hour. Test for done with toothpick that comes out clean filling will be puffy and look cool for 5 minutes as though there will be no room for topping while cooling prepare topping Don't worry, the filling deflates during the 5 minute cooling topping: combine together sugar, sour cram and vanilla in a bowl when 5 minute cooling is up, spread topping onto cake and return to oven for 5 minutes to set topping and smooth it out. to cool cake fully, place in refrigerator overnight. Minimum 5 hours to set topping and cake cover after fully cooled serve cold.
