Old Fashioned Bologna Salad uses a homemade cooked dressing instead of mayonnaise or Miracle Whip. The sweet and tangy dressing perfectly compliments the classic ingredients of bologna, relish, onions, celery and hard-boiled eggs. Serve it on humble sliced bread or on crackers for a vintage dinner.

1 pound bologna
1/2 cup sweet pickle relish
1/2 onion
2 stalks celery
2 hard boiled eggs
3 Tablespoons sugar
1 teaspoon flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground mustard
1/3 cup vinegar
1 teaspoon butter
2 egg yolks

Steps:

  • Grind bologna, and chop onions, celery and hard boiled eggs. (See notes for an easy shortcut.)
  • Combine ground bologna, diced veggies and eggs and pickle relish. Set aside.
  • In a medium saucepan, cook sugar, flour, salt, pepper, ground mustard, vinegar, butter and egg yolks until just boiling and thickened. Let cool.
  • Combine cooked dressing and bologna mixture.
  • Eat on crackers on as a sandwich.

1 1/2 lbs bologna
1 1/4 cups mayonnaise
3/4 cup sweet pickle relish, well drained
1/4 cup chopped onion
1 tablespoon Worcestershire sauce

  • Grind bologna with a grinder or food processor.
  • Mix rest of ingredients with bologna.
  • Mix until well combined.
  • Cover and refrigerate.
  • Use about 1/3 cup of mix per sandwich.

Not too long ago we were talking about a grinder and this recipe came to mind we used to make this all the time but haven't had this for years. Was a favorite, I am sure most of you had this recipe but I can't get it out of my head so I will post it.

2 lb ham or bologna
1 large onion (roughly cut)
10 small gerkins
3/4 -1 c mayo( your choice )
dash(es) salt and pepper

Steps:

  • 1. Grind about 1/4 ham or bologna, grind 1/4 onion in it, grind 1/4 gerkins in the mixture and repeat with rest of ingredients.
  • 2. Mix mixture well add mayo, and salt and pepper. Mix well refrigerate for at least an hour to let flavors blend.
  • 3. Serve with crackers or on a sandwich with lettuce.

My Favorite Bologna or Ham Salad for Sandwiches image

I grew up only knowing this by Ham Salad which is what my Mom and local Deli's up North called it. She said it was the "Poor Man's Ham Salad" which never contained any ham, just bologna, but giving it the wonderful flavor and color of what could have been ham. We loved it. I made it for my children as they grew up and it is still requested though they are adults now. I am in my 50's and still make it for myself as a snack spread or sandwich. I've seen a variation of recipes for this, tried some and still think mine is my favorite. Let me know what you think?

1 lb of your favorite bologna
0.75 (12 ounce) package sliced American cheese
1/4 cup sweet pickle relish
1/4 cup real mayonnaise (can use Miracle Whip)

Steps:

  • Do not use Velveeta for this recipe, it does not store well.
  • I suggest a food processor for this recipe unless you prefer a meat grinder. Use a large bowl with tight lid for storing.
  • Take all the bologna out of the packaging and quarter.
  • Unwrap all the cheese slices (if in wrap) and quarter as well.
  • Place half the meat and half the cheese in processor and pulse until semi-chunky. It should look spreadable. Scoop in bowl.
  • Add remaining bologna and cheese, process.
  • Place rest in large bowl and add relish, mix well.
  • Add 1/2 of the mayo, stir. You can choose the consistency if you prefer. I like it a bit more mayonnaisy. Add rest if preferred.
  • You can use either Miracle Whip or real Mayo, both are great. I like the real mayo because it works better with crackers.
  • Serve on either a hamburger bun (kid's favorite), sandwich bread, or club crackers.
  • Store remaining spread in fridge, it can last up to one week.
