OLD BAY KING CRAB LEGS

Old Bay King Crab Legs image

The classic seafood seasoning and lemon bring heat and brightness to sweet crab meat. The only way to improve it is with a dunk in drawn butter.

Provided by Food Network Kitchen

Time 35m

Yield 2 to 4 servings

Number Of Ingredients 4

3 pounds frozen cooked king crab legs
One 6-ounce box seafood seasoning, such as Old Bay, plus additional as needed
2 lemons
1 stick (8 tablespoons) unsalted butter

Steps:

  • Put the crab legs in the bottom of a large stockpot, then cover with 4 quarts of water and stir in the seafood seasoning (see Cook's Note). Halve the lemons and squeeze the juice into the pot, then add the rinds. Cover and bring to a boil, then cook over medium-high heat until the crab legs are warmed through, about 5 minutes. Remove the crab legs to a large serving bowl or platter.
  • Meanwhile, melt the butter in a small saucepan over medium-low heat. Cook until the butter foams and simmers, about 1 minute. Remove from the heat and let stand 5 minutes. Using a spoon, remove any milk solids from the surface of the butter, then slowly pour the melted butter into a small serving bowl, leaving any watery, white whey behind in the saucepan. Serve alongside the crab legs.

Categories     main-dish

Time 55m

Yield 1 to 2 servings

Number Of Ingredients 11

1 tablespoon unsalted butter, melted, plus more for greasing the baking sheet
1 whole bay flounder, pocket slit cut in the top of the fish
1/2 ounces canned or fresh claw crabmeat
2/3 cup freshly crushed saltine crackers
1/3 cup mayonnaise
1/4 cup finely minced fresh parsley
1 egg, beaten
1 large green onion, white and green part minced and chopped
1/2 teaspoon Old Bay Seasoning or Lawry's Seasoned Salt
1/4 cup fresh or store-bought breadcrumbs
Paprika, for sprinkling

Steps:

  • Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment and grease the paper with butter. Rinse the flounder; pat dry with paper towels. Place the fish on the prepared baking sheet with head-side up.
  • Starting on one side of the fish, insert a knife horizontally into the slit. Begin cutting, about 1 inch from the head, between the flesh and bone, stopping just before the tail to form a pocket. Cut another pocket on the opposite side of the fish.
  • Combine the crabmeat, saltines, mayonnaise, parsley, egg, green onion and Old Bay Seasoning in a medium bowl and fold together. Spoon the mixture evenly into the prepared fish pockets.
  • Sprinkle the fish with the bread crumbs and drizzle with the melted butter. Bake until the fish flakes easily when tested with fork, about 25 minutes.

OLD BAY CRABMEAT STUFFING

Old Bay Crabmeat Stuffing image

Love this stuff... I think it's best suited to (of course) fish or seafood, but also chicken or a Cornish hen. I love the bite of the Tabasco and the flavor of the seasonings blending with the crab. I like to use whole-grain bread for its benefits, but white bread sure tastes good here!

Tips:

  • Use fresh crabmeat. Fresh crabmeat has a sweeter, more delicate flavor than canned or frozen crabmeat. If you can't find fresh crabmeat, canned or frozen crabmeat will work in a pinch.
  • Don't overcook the crabmeat. Crabmeat is very delicate and can easily be overcooked. Cook it just until it is heated through, about 2-3 minutes.
  • Use a variety of vegetables. This will give your stuffing more flavor and texture. Some good vegetables to use include celery, onion, carrots, and bell peppers.
  • Season the stuffing well. This will help to bring out the flavor of the crabmeat and the vegetables. Be sure to use a variety of spices, such as Old Bay seasoning, salt, pepper, and garlic powder.
  • Don't pack the stuffing too tightly. This will prevent it from cooking evenly. Pack it loosely so that there is some air circulation.
  • Bake the stuffing covered for the first 30 minutes. This will help to prevent the stuffing from drying out.

Conclusion:

Old Bay Crabmeat Stuffing is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover crabmeat, and it is also a delicious side dish for roasted chicken or fish. Whether you are making it for a special occasion or just for a weeknight dinner, Old Bay Crabmeat Stuffing is sure to please everyone at the table.
