Time 40m

Number Of Ingredients 11

3 slices thick-cut bacon, diced
1 small Vidalia onion, diced
2 cloves garlic, minced
2 (14.5 ounce) cans diced tomatoes, NOT drained ((see note below to use fresh tomatoes instead))
1 tablespoon sugar
2 teaspoons fresh thyme leaves (or ½ teaspoon dried thyme)
1 dried bay leaf
½ teaspoon apple cider vinegar
½ teaspoon Worcestershire sauce
2 cups fresh or frozen okra, stems trimmed and cut into ½ -inch pieces
Salt and pepper, to taste

Steps:

  • In a large skillet or Dutch oven, cook bacon until the bacon is starting to get crispy and the fat is rendered, about 5 minutes.
  • Add the onion and garlic; saute for 5 more minutes.
  • Stir in tomatoes (with their juices), sugar, thyme, bay leaf, vinegar and Worcestershire sauce. Use the juices from the tomatoes to deglaze the pan, scraping up the browned bits from the bottom. Reduce the heat to low and simmer, uncovered, for 10 minutes.
  • Add the okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender (about 10-12 minutes for fresh okra or 7-8 minutes for frozen okra).
  • Remove the bay leaf. Season with salt and pepper, to taste. Serve immediately.

PAN-SEARED OKRA WITH BACON

Pan-Seared Okra with Bacon image

Okra is a staple in Gullah cooking, and let me tell you, give me a cast-iron skillet and I'm a happy girl. It's the perfect pan for giving that okra its crispy, roasted exterior. Paired with bacon...shoot, it's downright delicious. My secret for un-slimy okra? A squeeze of lemon juice.

Time 40m

1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika

Sauteed Okra with Heirloom Tomatoes and Bacon image

Scott Peacock and Edna Lewis, authors of "The Gift of Southern Cooking," share their wonderful sauteed okra recipe paired with heriloom tomatoes and bacon, which is a great dish to serve during any get-together.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 6

5 slices bacon
1 pound okra, washed, trimmed, and sliced about 1/2 inch thick
1 large sweet onion (preferably Vidalia), cut into 1/3-inch wedges
Coarse salt
Freshly ground black pepper
4 medium heirloom tomatoes, cut into 1/2-inch wedges

Steps:

  • In a large skillet, cook bacon over low heat until it is crisp and fat is rendered. Remove bacon and set aside.
  • Add okra to skillet and cook, stirring frequently, over medium heat for 5 to 7 minutes. Add onion wedges, 1/2 teaspoon salt, and 1/4 teaspoon pepper, and cook, stirring, for 5 minutes.
  • Add tomatoes and reduce heat to low. Continue cooking, partially covered, until tomatoes are just heated through, 3 to 4 minutes. Season with salt and pepper. Crumble bacon slices over tomatoes; serve warm.

Tips:

  • To select the best okra, choose pods that are small and tender, with a deep green color and no bruises or blemishes.
  • If you don't have any bacon grease, you can use olive oil or butter instead.
  • To make the dish spicier, add a pinch of cayenne pepper or red pepper flakes.
  • If you don't have any fresh tomatoes, you can use canned diced tomatoes instead.
  • Serve the dish with rice, pasta, or bread for a complete meal.

Conclusion:

Okra, tomatoes, and bacon is a classic Southern dish that is easy to make and delicious to eat. The combination of okra's unique flavor and texture, the sweetness of the tomatoes, and the smokiness of the bacon make for a dish that is both satisfying and flavorful. Whether you're looking for a quick and easy weeknight meal or a special dish to serve at a gathering, okra, tomatoes, and bacon is sure to please everyone at the table.
