Steps:
- Preheat oven to 350 degrees.
- In large pot cook pasta as instructed on the box. Drain and put back into the pot.
- Add diced tomatoes, tomato sauce, black beans, green pepper and taco seasoning mix to pot. Mix so it's all combined.
- Put mixture in casserole dish or 12 inch well-seasoned cast iron skillet and sprinkle all your cheese on top. Spread diced jalapenos on top.
- Bake for 30 minutes.
- Serve warm and put a nice dollop of sour cream and cilantro on top.
Tips:
- Use frozen taco tots. Frozen taco tots are already cooked, so they will cook quickly and evenly in the casserole.
- Choose a flavorful ground beef. A good quality ground beef will make a big difference in the flavor of the casserole. Look for ground beef that is at least 80% lean.
- Don't overcook the taco meat. Overcooked taco meat will be dry and tough. Cook the taco meat until it is just cooked through, about 5-7 minutes.
- Use a variety of cheeses. A combination of cheddar, mozzarella, and cream cheese will give the casserole a rich and creamy flavor.
- Add your favorite toppings. Top the casserole with your favorite taco toppings, such as sour cream, guacamole, salsa, and shredded lettuce.
Conclusion:
This Oh-So-Creamy, Oh-So-Cheesy Taco Tot Casserole is a quick and easy meal that is perfect for busy weeknights. It is also a great dish to serve at parties or potlucks. The casserole is loaded with flavor and is sure to be a hit with everyone who tries it.
