2 rounds (8 ounces each) Camembert cheese, rind on, sliced
1 package (8 ounces) cream cheese, softened
1 medium onion, finely chopped
1 teaspoon paprika
1/2 teaspoon caraway seeds
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, mash Camembert cheese with a fork to desired consistency. Beat in cream cheese, onion and seasonings. If desired, sprinkle with additional caraway seeds.

1 lb ripe camembert cheese or 1 lb brie cheese, rind removed
1 tablespoon soft butter
1/2 lb cream cheese
2 tablespoons chives, finely chopped, divided
1/4 onion, finely chopped
salt and freshly pepper
paprika
caraway seed
6 -8 tablespoons beer, to taste
onion, finely sliced rings for garnish

Steps:

  • Mix the Camembert or Brie, butter, cream cheese, 1 tablespoon chives and onion together until you get a spreadable mixture.
  • Add salt, pepper, paprika and caraway seeds to taste.
  • Add some beer to make the mixture even more smooth and to taste.
  • Sprinkle with paprika and garnish with remaining chives and onion rings.

My version of an Obatzda cheese that is served with soft pretzels and washed down with good beer. I serve this at my annual Oktoberfest Party. Not a traditional obatzda, but a really tasty one!

1 head garlic
1 teaspoon olive oil
16 ounces Camembert cheese, rind removed and cheese cut into pieces
2 (8 ounce) packages cream cheese
1 (5 ounce) package grated Parmesan cheese
3 ounces shredded extra-sharp Cheddar cheese
1 cup German-style beer
¼ cup butter
½ cup minced onion
2 teaspoons caraway seeds
½ teaspoon paprika

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Bring all the refrigerated ingredients to room temperature.
  • Slice the top off the garlic, exposing the cloves. Place in a square of aluminum foil and drizzle olive oil over garlic. Wrap foil around garlic.
  • Roast in the preheated oven until garlic is tender, 35 to 40 minutes. Cool roasted garlic completely.
  • Combine Camembert cheese, cream cheese, Parmesan cheese, Cheddar cheese, beer, and butter in a food processor; process until smooth. Add roasted garlic cloves, onion, caraway seeds, and paprika; process until smooth. The mixture may be a little on the "soupy" side but will firm up upon refrigeration; transfer to an air-tight container and refrigerate until flavors blend, at least 2 hours.

Mostly this famous Bavarian cheese dip is made with beer. There is gluten free beer, but considering how expensiv it is, I wouldn't waste it for cheese dips... When I visited my friends near Munich lately, they told me that they actually make obatzda without beer. So this is it :-) If you want to keep the dip for some days, omit the shallot and serve with thinly sliced onion instead. Cooking time is refrigeration time.

1 ounce shallot, minced
1 garlic clove
3 1/2 ounces cottage cheese
3 1/2 ounces cream cheese
3 1/2 ounces butter, softened
