1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

3/4 cup chopped nuts
1 bag (12 oz) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch pan. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in molasses, vanilla and eggs. Stir in oats, flour, baking soda and salt. Stir in nuts and chocolate chips. Spread in pan.

1 1/2 cups flour
1 1/2 cups oatmeal
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, soft
1 (13 1/2 ounce) can nestle dulce de leche (if you can't find the nestle dulce de leche can I have substituted regular sweetened condensed milk)
1 cup toffee pieces

Steps:

  • Preheat over to 350. In a big bowl mix flour, oatmeal, brown sugar and salt. Cut in softened butter with pastry blender until crumbly. Save out 1 cup of mixture, press rest in a 13x9 pan. Do not grease the pan.
  • Bake 10 minutes. Empty dulce de leche into microwave bowl. Heat dulce de leche in microwave on medium power until it is soft enough to spread. 2-4 minutes total- I microwave for 45 seconds, stir, then zap again on med power.
  • Spread dulce de leche over baked crust. Sprinkle toffee bits and the 1 cup of oats mixture over that. Bake 20-25 minutes or until golden brown. Cool 15 minutes.
  • Run a knife around the edge of pan to loosen. Cool completely another 30 minutes. Makes 32 bars.

1 cup finely chopped pecans
1 cup sweetened condensed milk
1/2 cup cream of coconut
2 tablespoons milk
12 ounces white chocolate or 2 cups white chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • Line a 13x9 inch pan with aluminum foil leaving one inch overhang.
  • Spray foil with no-stick spray.
  • Beat butter, sugar and vanilla extract until creamy.
  • Combine flour, oats, baking soda, salt and pecans.
  • Add flour mixture to butter/ sugar mixture and stir until mixture starts to come together.
  • Press 2/3 oat mixture into prepared pan.
  • Bake for 15 minutes.
  • In a medium sauce pan, heat condensed milk, cream of coconut and milk over medium heat.
  • Stir in white chocolate.
  • Turn off heat and stir until morsels are melted.
  • Pour melted white chocolate mixture over baked oatmeal crust.
  • Crumble remaining oat mixture on top and bake for 20 minutes more.
  • Let cool completely and chill.
  • Lift foil from pan and cut into bars.
