- In the bowl of an electric mixer (or using a hand mixer), beat together the brown sugar and butter until fluffy. Beat in the vanilla. Add the eggs one at a time, scraping the bowl after each one.
- Mix together the flour, salt and baking soda in a medium bowl. Add it into the creamed mixture in 2 to 3 batches, mixing until just combined. Mix in the oats until just combined.
- Use your preferred size cookie scoop (or a regular spoon) to drop portions of dough onto baking sheets, spacing them a couple inches apart. Bake until dark and chewy, 12 to 13 minutes. If you'd like a crispier cookie, just cook a little longer!
- Let the cookies cool slightly on the baking sheets, then transfer onto a plate for serving.
SPLENDA BRN SUGAR OATMEAL COOKIES
This is actually 1/2 recipe so I don't have so many cookies at once. Myself and a friend have diebetes so it makes me feel good to use this with the splenda brn sugar and we love them and no one else ever notices its splenda. I also like to zap in microwave if they have sat awhile to warm them I put them in for like 10 seconds...

- 1. In a large bowl, cream together the butter, brown sugar, egg and vanilla until smooth. In a separate bowl, whisk the flour, baking soda, cinnamon and salt together. Stir this into the butter/sugar mixture. Stir in the oats, raisins and walnuts, if using them.
- 2. At this point you can either chill the dough for a bit in the fridge and then scoop it, or scoop the cookies onto a sheet and then chill the whole tray before baking them. You could also bake them right away, if you're impatient, but I do find that they end up slighly less thick. (I personally never chill mine)
- 3. The cookies should be two inches apart on a parchment-lined baking sheet. Bake them for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. Let them sit on the hot baking sheet for five minutes before transferring them to a rack to cool.
- 4. I have recently made these and added crunchy peanut butter instead of the other nuts and we loved it =) Try just adding some peanut butter to a cookie or two when you bake them just to see if you will like them thats what I did then added to the whole batter.

There is no sugar in this recipe however if you prefer sugar to honey--then simply alter the recipe....cut the baking soda to 1/4 tsp. and add an extra tablespoon of water. Your baking temperature should go to 350 if you are using sugar. When replacing sugar with honey you have to increase the baking soda to increase the acid and you reduce liquid by 1 Tablespoon. Also, with honey baking--lower the baking temp.

- In a large bowl, mix all the dry ingredients together.
- In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).

- If you don't have a cookie sheet, you can bake the cookies on a greased baking pan.
- To make sure the cookies are cooked through, insert a toothpick into the center of a cookie. If it comes out clean, the cookies are done.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Store the cookies in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
