1/4 c butter
1 c brown sugar, firmly packed
2 large eggs, beaten
1 pinch salt
1 tsp vanilla extract
3/4 c milk
3/4 c light corn syrup
1/2 c unsweetened coconut
3/4 c quick oats, not cooked, use dry
1 unbaked pie crust, 9 inches

Steps:

  • 1. Preheat oven to 350 degrees. Melt butter. Mix with sugar in a medium mixing bowl. Add beaten eggs, salt, and vanilla. Add remaining ingredients (except pie shell) in order listed. Mix well. Pour into unbaked pie shell and bake at 350 degrees for about 50 minutes.
  • 2. NOTE: You can protect the edges of the pie shell from becoming too dark by covering them with foil around the pie. There are also edge protectors sold in most stores that carry pie plates.
