1 c. shortening
2 t. cinnamon
2 T. molasses or honey
2 eggs, unbeaten
1 t. salt
2 t. vanilla
2 c. sugar
2 c. flour
2 t. baking soda
2 c. oats
2/3 c. raisins

  • Combine first 7 ingredients and beat. Sift flour and baking soda; add to above. Then add oats, raisins and nuts by hand. Drop by tablespoon on greased cookie sheet. Bake 350 for 10 minutes.

Tips:

  • Use old-fashioned oats. They will give your macaroons a chewier texture than quick-cooking oats.
  • Toast the oats before using them. This will bring out their flavor and make them more crispy.
  • Don't overmix the batter. Overmixing will make the macaroons tough.
  • Chill the batter for at least 30 minutes before baking. This will help the macaroons hold their shape.
  • Bake the macaroons until they are just set. Overbaking will make them dry and crumbly.
  • Let the macaroons cool completely before serving. This will help them firm up and develop their full flavor. You can also store them in an airtight container at room temperature for up to 3 days.

Conclusion:

Oatmeal macaroons are a delicious and easy-to-make treat that can be enjoyed by people of all ages. They are perfect for a quick snack or dessert, and they can also be served at parties or gatherings.
