I had all the ingredients and the cooking time is so short so this is the one I made for her. I'm so glad I did, these turned out to be very delicious and quite different from 'normal' cookies. My mom used to make these - they were our favorites! They are very crisp, and tend to shatter when you bite into them. Watch them carefully while baking since they do tend to burn quickly.

OATMEAL LACE COOKIES

Categories     Cookies

Yield 6 dozen

Number Of Ingredients 10

8 tablespoons (1 stick) butter
1/4 cup milk
1/4 cup molasses
1 teaspoon vanilla
3/4 cup sugar
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup quick or old-fashioned oats
1 cup (optional) chopped nuts, finely chopped

Steps:

  • Preheat oven to 375ºF. Melt butter in saucepan. Remove from heat; stir in milk, molasses and vanilla. Sift together sugar, flour, baking powder and salt. Blend into milk mixture. Stir in oats and nuts. Drop by level teaspoonfuls 2 inches apart on greased cookie sheet. Bake 6 to 8 minutes. Cool.

Tips:

  • Use old-fashioned oats: Old-fashioned oats provide a chewier texture than quick oats or steel-cut oats. If you only have quick oats, use 1 cup plus 2 tablespoons to equal 1 cup of old-fashioned oats.
  • Chill the dough: Chilling the dough for at least 30 minutes helps the cookies hold their shape better. You can chill the dough for up to 24 hours.
  • Roll the dough thinly: The thinner you roll the dough, the crispier the cookies will be. Aim for a thickness of 1/8 inch or less.
  • Bake the cookies until they are golden brown: The cookies will continue to crisp up as they cool, so don't overbake them. Look for the edges to be golden brown and the centers to be set.
  • Let the cookies cool completely before serving: The cookies will be very fragile when they are first out of the oven, so let them cool completely on the baking sheet before transferring them to a wire rack.

Conclusion:

Oatmeal lace cookies are a delicious and easy-to-make treat that is perfect for any occasion. They are crispy, chewy, and full of flavor. With just a few simple ingredients, you can make these cookies at home in no time. So next time you're looking for a sweet snack, give oatmeal lace cookies a try!
