DATE-FILLED OATMEAL COOKIES
Recipe came from my husband's grandmother. They are much easier to make than they sound. I have halved the recipe successfully; and I have used jam instead of the cooked dates although nothing beats the original recipe.

Tips:
- Use old-fashioned oats for a chewier cookie. If you only have quick-cooking oats, use 1 cup instead of 1 1/2 cups.
- Be sure to toast the oats before using them. This will help bring out their flavor and make them more fragrant.
- Don't overmix the dough. Overmixing will make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
- Let the cookies cool on a wire rack before enjoying them. This will help them firm up and prevent them from falling apart.
Conclusion:
These oatmeal date-filled cookies are a delicious and healthy snack or dessert. They're easy to make and can be customized to your liking. Try adding different nuts, seeds, or dried fruits to the batter. You can also drizzle the cookies with melted chocolate or frosting. No matter how you choose to make them, these cookies are sure to be a hit!
