OATMEAL CREAM PIE
This recipe comes from my in-laws and it is one of a kind! The texture is great and each slice holds together nicely. Very reminiscent of pecan pie without the nuts. Serve warm with a scoop of ice cream or cold with some whipped cream on top! Warning: This pie is extremely sweet (and good that way)!

- Don't overcook the oatmeal. It should be cooked until it is tender but still has a little bite to it.
- Let the oatmeal cool slightly before adding the cream cheese. This will help to prevent the cream cheese from curdling.
- Use a high-quality cream cheese. This will make a big difference in the flavor of the pie.
- Don't overbeat the cream cheese mixture. It should be smooth and creamy, but not fluffy.
- Chill the pie for at least 4 hours before serving. This will help the flavors to meld and the pie to set.
