1-1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour

1 cup raisins
1 cup coarsely chopped fresh or frozen cranberries
1 tablespoon grated orange zest

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, salt and baking soda; add to the creamed mixture. Stir in the oats, raisins, cranberries and orange zest. Stir in baking chips. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 375° until the edges are lightly browned, 10-12 minutes. Cool on wire racks.

Keep loosely covered, and they will maintain their chewiness for several days, if they last that long.

1 cup unsalted butter at room temperature
1 ½ cups light brown sugar
2 teaspoons vanilla extract
2 large eggs
2 cups old-fashioned rolled oats
1 ½ cups all-purpose flour

1 ½ teaspoons coarse kosher salt

  • 1. Preheat oven to 350F. Line a baking sheet with parchment paper. In a medium bowl, whisk together melted butter, sugars, eggs, vanilla extract and ground flaxseeds until mixture is smooth. In a large bowl, whisk together flour, baking soda and salt. Pour in wet ingredients and stir until almost combined, then add in the oats and dried cranberries and stir until the dough comes together with no streaks of flour remaining. Drop 1-inch balls of cookie dough onto prepared baking sheets, leaving a little room for the cookies to spread. Bake for 10-12 minutes, until cookies are set. 1/2 pound (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar

1 cup dried cranberries

Steps:

  • In a medium bowl, whisk together flour, salt, cinnamon, baking powder, and baking soda. Set aside. In a small bowl, whisk together the vanilla, milk, and eggs. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars, and beat on medium speed until light and fluffy.
